SAFEWAY STORES EXPERT TO HOLD LOCAHESSIONS Fox Rialto Selected for 3 Day School Pastry Mak ing and Quick Entrees On Opening Day Program Speedy preparation of menus will be featured In the opening cooking achool session tomorrow, according to plans announced by Margaret Le nore Coates in charge of Safeway Stores' Homemakers Bureau's three day cooking achool which will be held at the Fox Rialto theatre In this city. According to Miss Coates each recipe has been selected because , of Its Interest to housewives, as shown In requests to the Safeway Home makers' Bureau. All recipes In the three sessions will Include almost every form of practical cookery. Miss Coates will open her school with a demonstration of what she calls "fool-proof" pastry. She also will attack the average housewife's "bug-bear" . . . the successful mak ing of meringue. Homemakers attending the ses sion will discover many old favorites disguised to make them appear as new dishes. They also will learn bow to utilize left-overs and prepare "no-trouble-at-all" meals for unexpected guests. Margaret Coates also will explain and demonstrate proper ways of making coffee and of setting the luncheon table. The Safeway Stores' school In Medford will be personally super vised by J. P. RECIPE PACKET The elimination of grating and melting in chocolate recipes Is one of the features of Miss Margaret Lenore Coates' lectures and demon strations In connection with the Safeway Stores cooking school. "I have found a chocolate that Is a chocolate and that nevertheless comes in powdered form," Miss Coates said. "Chocolate is the refined substance of the cocoa bean, containing all of its natural fat," she continued, "while cocoa Is the same substance after most of the natural fat has been removed. Ground chocolate stands between the two In fat con tent, having less than solid choco late and more than cocoa." Miss Coates uses OblrardelU's ground chocolate exclusively In all her chocolate cooking and will show Its use In connection with the cooking school, both for making chocolate beverage and for other cooking and baking uses. When syrup has cooled to 180F., or until bottom of pan is just warm, pour in a fine stream Into the egg whites, fold ing it in steadily to prevent settling to bottom of mix Ing bowl. Sift in a small portion ofthe flour. Fold this In and continue until all of the flour has been added. Pour batter into a water-treated angel food pan. Oven is preheated to 200 degrees a slow oven.
