No other vege table glvee quite en many kind of value for the money, and no other la more readily available. In one form or another, In all parte of the country at all tlmea of the year. We have nothing to match the to mato In flavor. In color, or In va riety of poulbllltlea for the table. If you doubt thla. try to Imagine what your meala would be like with out the "love apple." a It used to be called. No broiled or fried tomatoee. No tomato Juice for cock tall. No tomato aoup and no to mato flavor In vegetable or chicken, Creole aoup. No cateup or chill ssuce. No scalloped or stunea to matoes, no macaroni with tomatoee, no tomato omelet. No tomatoee for swlu ateak and meat loaf. No elloed tomato or Jellied tomato salad No tomato preserves. Certainly no other one article of food Is utilized in quite so many ways, or would be missed more by most people. Quite ss Important, however, aa its flavor, color and general attrac tiveness, ars the food values of the tomato. Moreover, It la easy to can tomatoes and they are available an year at repsonable cost. The tomato la used as a vegeiaoie. dui il -really a fruit, and It serves the same purpose In the balanced diet aa the eltrua fruits. Oranges and grapefruit are highly recommended by nutritionists for their vitamin content. Tomatoes contain the same rltsmlns, and nowadays tomato Juice Is almost Interchangeable with orange luicit in the menu. Each la alao a good source of several minerals. Tomato Juice Is fed to little babies. to make sure they will get enougn vitamins, especially vitamin O. This vitamin is easily destroyed In cook ing, but the tomato, unlike the non acid vegetablea, retains a goodly portion of lta vitamin C even when cooked or canned. It furnishes also some vitamin A. which la not easy to provide In sufficient quantity In a low cost diet, either for children or adults. A variety of roods con tain vitamin A liver, butter, car rota, cream cheese, greena of many kinds, as well as tomatoes but It taket much more than a dally serv ing of any one of these foods, the scientists say, to provide all the vita, mln A one person should have. The tomato also contains, vitamin B, which la necessary for growth and appetite. One excellent way to vary the use of tomatoes la to tomato Juloo "cock tall" which Is now so popular. The Juice may be served alone or It may be flavored In various ways, accord ing to taste. The "cocktail" la easy to make, either by adding the aea aonlng to the canned Juice, or by cooking the fresh or canned tomatoes for a few minutes, with the sea sonings and then rubbing through sieve to tske out the seeds. This flavored Juice which Is the "cocktail" may be kept In quantity In a re frigerator and used from day to day as desired. To make tomato Jelly, for salad, add gelatin, pour Into wet custard eups and put In a cold place until set. MENU FOR ONE DAY Tomato Juice Cooked Cereal Breakfast. Toast Coffee (adults) Milk (children) Dinner. Tomatoes, Corn and Cheese on Toast Mashed Turnips Bread aud Butter One-egg Cake and Lemon Sauce Milk for Children Supper. Scalloped Potatoea and Onions Bread and Butter Canned Fruit Milk for All RECIPE8. Tomatoes, Corn and Cheese on Toast. 3 tablespoons flour 8 tablespoons melted butter or fat 1 onion, sliced 3 cups tomatoes, csnned or fresh 2 cups canned corn 3 teaspoons sslt Vt pound sharp cheese, shaved thin Brown the flour In a heavy skillet, remove the flour from the skillet, and blend with 3 tablespoons of the fat. Brown the onion In the remain Ing fat, add the other Ingredients except the cheese, and cook for about 10 minutes, stir In the cheese and when melted serve on thin crisp toast. Tomato-Jelly Salad. 3 tablespoons gelatin Vj cup cold water 1 quart tomatoes, canned or freeh 3 or 8 altces onion VA teaspoons salt 1 teaspoon sugar 1 tablespoon grnen pepper, chopped 3 tablespoons celery, chopped 1 tablespoon parsley, chopped 1 cup cabbage, shredded. Soak the gelatin In the cold water for 5 minutes. Boll the tomatoee and ' onion tor 5 mtnutea, atraln through a fine eleve, pour the hot tomato Juice over the softened gela tin, and atlr until It. Is dissolved Add the salt and sugar, and chill. When the gelatin mixture Is partly set, add the finely chopped vege tables, and mix well. Add more salt If' needed. If the mixture la not tart enough, add a little lemon Juice or vinegar. Pour Into wet custard cups and place In a cold plaoe until set, turn out on crisp lettuce leaves, and aerve with sslsd dressing. Tomnto cocktail. . 1 quart tomatoes, canned or fresh 3 atalks celery, chopped 54 green,, nepper, chopped 1 teaspoon salt 3 tablespoons tomato catsup I teaspoon onion pulp 1 teaspoon horseradish. Boll the tomatoes, celery, pepper, and aalt for about B minutes, and rub through a aleve that la tine enough to keep back the aeeds. To the tomato Juice and pulp, add the catsup, onion and horseradish. (A little lemon Juice Is a good addition If the tomatoes are not very acid). Star the mixture well, and put In a cold place to chill. Beat before serving and pour Into smsll glssses. Finely chopped parsley aprlnkled on top adds attractiveness. Thinly sliced cucumber may be used In plaoe of the parsley. 1-S cup fat 1 egg ,0 teaspoons baking powder Hi cupe eugar V4 teaspoon sslt Vs teaspoon flavoring. Place the fat in a warm place until It becomes soft though not melted. so that It may be combined easily with the sugar. Blend the fat and the sugar thoroughly, stir In the besten egg, and add alternately the dry Ingredients, which have been mixed and sifted together, and the liquid. Add only a email quantity of liquid at a time. Add flavoring. Pour the batter Into lightly greased. floured pens, taking csre that It Is spread evenly. If baked In a thick loaf the oven temperature should be very moderate (about 326 degreee P.), but If baked ss cup cakes or thin layers the oven should be about 375 degrees F.
