Crunh to h fine pulp. Put crushed fruit Into lar&sc kettle, una add HUar, butter, and lemon juice. Mix ami hvtiis to a boll, stirrinit con stantly. At ' once add pectin, Htiri-iiiR contantiy, and brim: npain to n full rolling boil. Boil min ute, ntlrrhiK constantly over entire bottom before and white boiling to prevent sticking. Remove from fire, and Mir frequently for S min utes to cool slightly, to prevent floating fruit. Pour quickly. Cov er hot butter with film of not par affin: when butter Is cold, cover with -inch of hot paraffin. Roll glass to spread paraffin on sides. Sometimes sets very slowly. Re quires 8 to 12 bananas. Makes 9i to 10 eight-ounce biases. Jellied linked Apples ttako apples in usual way. About ten minutes before they are done, remove from oven and fill centers . with rasln Jam. When filled, return apples to oven and .complete the baking. Servo hot or cold, with or without cream. Carrot Marmalade Ingredients: 4 cups (2 lbs.) cit vrotM mixture and cooked, finely , chopped carrots; cup pectin; Ql6 cups (2i lbs.) SUg&T. Peel orange, and dice, discarding ' hard center and seeds. Mix with ..grated rinds, .lemon juice and finely ::ohop,ped carrots. Measure citrous ,hd carrot mixture into large ket tle, ' Add sugar, mix, and bring to a full rolling boil over hottest fire. Stir constantly before1 and while -boiling. . Holl hard 5 minutes. Up 'move from fire and stir in pectin. Pour quickly. Cover hot marma lade with film of hot paraffin: when ' marmalade - la cold, cover with n Inoh of hot paraffin.
