Vegetable foods were chosen and cooked many wayi. because vegetables are so in- nortant to the balanced diet. 1 tie experts n ( were experienced in discriminating shades of 'r y '-- -.-8 flavor. Not more than th-ee vegetables were cooked and tested at one time in order that the sense of taste should not be blunted. This explains why the tests had to be catried over such a long period of time. In every case, vegetables cooked in little water with the addi tion of a dash of sugar won unanimously. This, at first, might strike some as surprising, but it must be remembered that it is not the purpose of the small amount of sugar to make the vegetables taste sweet. Sugar is used here as a seasoning, and it is perhaps the greatest seasoning of all. It develops the natural, delicate flavors of the vegetables just as it docs of fruits, cereals, meats, gravies and soups. Encourage variety and you encourage health for every rr.eilber of your family. Serve at least two cooked vegetables a djy in liMition to a raw vegetable salad. Serve at least two fruitc a clay.
