First, though, here are some general suggestions that are worthy of a second glance: Rinse freshly-bought vegetables in cold water (don’t soak them), wrap in damp cloth or replace in paper bag or put in vegetable compart ment; and store in refrigerator If they must be peeled, don't peel them till the last minute. Cook them quickly in the least pos sible amount of water (exceptions are spinach and strong-flavored vegetables like cabbage, which are best cooked in plenty of water, uncovered). To hold the bright color in red cab bage and beets, add 12 tsp. vinegar or lemon juice for each cup of shredded vegetable, to the boiling water.
