NOW THAT fresh vegetables are com
ing on the market in good quantity
again, it’s a good time to explore
some of the possibilities of using
them in fresh and lively ways.
First, though, here are some general
suggestions that are worthy of a
second glance:
Rinse freshly-bought vegetables in
cold water (don’t soak them), wrap
in damp cloth or replace in paper
bag or put in vegetable compart
ment; and store in refrigerator
If they must be peeled, don't peel
them till the last minute.
Cook them quickly in the least pos
sible amount of water (exceptions
are spinach and strong-flavored
vegetables like cabbage, which are
best cooked in plenty of water,
uncovered).
To hold the bright color in red cab
bage and beets, add 12 tsp. vinegar
or lemon juice for each cup of
shredded vegetable, to the boiling
water.

turnips, carrots, beets and potatoes;
moisten with 4 tbsps. meat stock or
water enriched with a beef cube.
Melt 3 tbsps. shortening in hot fry
ing pan; spread the vegetables evenly
over the pan’s surface and cover.
Reduce heat and cook slowly 15 to
20 minutes or until brown crust is
formed. Loosen hash from pan, fold
