W heat p rep aratio n s should be conked a t least tw o hours; o at meal is pot thoroughly cooked sh o rt of five hours. I f cereal is purchased in a p ack age, it is advisablo to double th e length o f tim e fo r cooking specified in th e d i rections. A general rule fo r com bining th e ingred ien ts in cooking cereal por- ductg is as follows: Allow one tea spoonful of salt to each q u a rt of w ater. B rin g th e w ater to a boil in th e upper p a rt of th e double boiler and slowly s tir in the cereal. A fte r the m ixture has boiled up, place the vessel over hot w ator in th e lower p a rt o f the boiler and cook the required len g th of tim e, w ith o u t stirrin g . Knough w ater should be used in cooking the cereal to swell the g rain s to the maximum size; b u t guard ag ain st th e gruel consistency, as th e cereal will then slip down in all, p ro b ab ility w ithout thorough m astica tion. F ru its served w ith cereals provide delicious variations. Rice cooked w ith raisins, steam ed rice w ith fig s as a gar nish and d ates w ith oatm eal are whole some and d ain ty b re a k fa st dishes.
