spoonful of salt to each q u a rt of w ater.

s tir in the cereal. A fte r the m ixture
has boiled up, place the vessel over hot
w ator in th e lower p a rt o f the boiler
and cook the required len g th of tim e,

be used in cooking the cereal to swell
the g rain s to the maximum size; b u t
guard ag ain st th e gruel consistency, as
th e cereal will then slip down in all,
p ro b ab ility w ithout thorough m astica
tion. F ru its served w ith cereals provide
delicious variations. Rice cooked w ith
raisins, steam ed rice w ith fig s as a gar
nish and d ates w ith oatm eal are whole
