The first tep in entering vegetables in fair for judging competitio ns is getting a copy of the Fair Book, which con- tains exhibition rules for vegetable . Follow the specific rules for exhibiting vegetables. Here are five guidelines for selecting winning vegetables used by judges: Trueness to type-this simply means electing vegetables that look li ke they're supposed to. For example, tomatoes are sup- posed to evenly round, so don' t select one that is oblong and looks like a squa h in hape. Quality and condition-fair judges look for vegetables that are at their best for eating. Select normal-sized vegetables that are read y to serve. Vege- tables scarred by insects should not be entered. Also discard vegetables marred by disease, rough handling or careles cul- tivation. Uniformity-entry vegetables should be similar in size, shape, color, texture and stage of maturity. Size-contrary to popular opi- nion, large entries do not have competitive edge over other en- trie (except for special entries s uch as largest pumpkin, watermelon, or head of cab- bage ). Largeness suggests coarseness, overmaturity and possible poor quality. Medium- sized vegetables are more typ- ical of a variety and mo t de- sired .
