Senior Science Advisor in a recent news release from the American Institute for Cancer Research To date, the available data "stron gly suggest that a diet enriched in plant products reduces cancer risk," •uud Dr Campbell, a cancer resear chef and professor of nutritional biochemistry at Cornell t'mversity Cancer risk, he said, "increases with high intake of dietary fat and protein, and low intakes of food rich in vitamin C vitamin A (as beta carotene', vitamin and dietary fifier " Dr Campbell's status report on diet, nutrition and cancer summa rized the studies that have been undertaken since the first major conference on the subject was held in I»75 One of the most exhaustive of the studies completed by the C S National Academy of Sciences in 1*82. found enough of a link to "formulate interim dietary guide lines that are both consistent with good nutritional practices and likely to reduce the risk of cancer," said Dr Campbell, who served on the NAS committee responsible for the report E Hr said that of those guidelines, "the two that will have the most likely impart on consumers in the marketplace were the recommend* lions 1 1 to reduce dietary fat intake from the current level of 40 percent 45 percent to 30 percent of total caloric intake and 2i to emphasize the importance of including fruits, vegetables and whole grain cereal products in the daily dirt " Among the research activities currently tieing funded by the Amrr lean Institute for Cancer Research for which Dr Campbell serves as Senior Science Advisor and other organizations are studies on vita mins A, C, and K and the trace mineral selenium on various popula lion groups a survey of hypotheses on the relationships between life style factors and cancer incidence and a study of the effect of multiple dietary risk factors on selected cancers in the People s Republic of China Al this point. Dr Campbell said, there appears to I k - consistent evi donee within various studies indica ting a positive relationship between nutrition and cancer It is hoped that within the coming decade, conclusive data "will enable the American public to make the appro priate modifications in their dietary practices with confidence to reduce cancer risk.” he added COMPUTERS IBM COMPATIBLE Computers, Software Training For Sale CompuCount (Glenn, Joan «X Kim Wilcox!
