1 package lem on-flavored gelatin
54 cup cold w ater
2 cups sa u e rk rau t, chopped
1 cup beets, cooked and cubed
Soak g elatin in cold w ater. D rain
s a u e rk ra u t and save juice. Add
enough w a te r to m a k e 154 cups.
H eat and add to dissolved gelatin.
Add s a u e rk ra u t and beets. Pour
into m olds rinsed in cold w ater.
C h ill u n til firm and unm old on salad
greens. Serve w ith m ayonnaise.
M ix e d Vegetable Salad.
(Serves 6 to 8)
1 cup cooked peas
1 cup eauliflo w erets. cooked
1 cup green beans, cooked
54 cup french dressing
6 to 8 lettuce cups
1'4 teaspoons anchovies
M a rin a te vegetables in french
dressing. Toss in anchovies and m ix
lig h tly . F ill lettuce cups and garnish
w ith radishes and spinach leaves, if
desired.
