The “Eat More Turkey’ campaign, i i sponsored by the Oregon Turkey i improvement Association, got under way August 18 with distribution tu dealers of posters, recipe books, and other material designed to promote turkey sales. From now on, accord Ing to Noel L. Bennion, association secretary, every effort will be made to sell the turkey eating habit to the northwest consumer. Oregon and southern Washington turkey growers and processors, he says, are co operating in the current drive to im press the public with the advantag >s of greater turkey consumption. Growers ar«' now beginning to mar ket th«' first of the 1947 turkey crop, Bennion points out. Emphasis is placed l>y the association secretary on the relative low cost of turkey compared with other types of meat now on the market. The choice broadbreasted northwest turkey, once considered a luxury item, is definitely now in the economy food class, n says. ■ The Eat More Turkey campaign." Bennion declares, "is good for the Family menu—and good for the bud get. too.” Tremendous strides forward in the preparation and serving of turkey have been made In recent years, says A. C. Potts of Colton, Oregon, presi dent of the Turkey Improvement Association. Not so many years ago. he points out. turkeys were a delicacy reserved for special occasions such as Thanksgiving and Christmas. Then, turkeys were hardly ever thought of except in connection with the roast ing oven. Today, he says, many dif ferent processes designed to make turkey meat more appetizing have been perfected. There are, he ex plains, as many different ways to pre pare and serve turkey as there are methods of preparing other choice ntfats. Included In the examples cited are turkey steaks, smoked tur key. barbecued turkey, canned tur key , turkey pie, smoked turkey speard half turkey, cut-up turkeys, turkettes, and turkey-’burgers. A large proportion of the turkeys produced in the United States are grown here in Oregon Potts points out.
