Cook the pumpkin and strain it, just as you do for pies, being careful not to have much water in it. F ill the cans full. Shake down, so as to have them solid, put on the tops, screw down just a little, so you can lift them, place in boiler, w ith thick paper between the cans and boiler on botten, fill tbe neck o f cans with water and boil one good hour. T a k e out and wipe the necks of the cans, and i f the pumpkin has shrunk sway, fill cans up w ith boiling w ater, put on rings and screw down the tops tight, and it w ill keep aix months in a good, cool place. T here can be no accurate rule in the matter of quantity o f refreshment but the following averages may be of help: Four quarts o f chicken salad w ill serve 26 persons. One quart o f ho| bullion w ill serve 8, but when jellied but 6. O f lemonade or fruit punch you w ill need 10 quarts for 60 person^; o f coffee, 26 cupfuls to one gallon of very good but if ordinary a gallon may supply 40 cupfuls. One quart of whipped cream w ill yield 26 spoonfuls, and for 26 cupfuls 1 pound o f cut sugar w ill be needed. There are from 200 to 210 olives in a quart bottle and in serving them you must be guided by the etiquette of guests for more. 24 sandwiches may be counted to a loaf of bread, two slices being cut to serve three people, one pound of butter and 1 pint filling to a loaf, in serviug oysters four are usually allowed for each person, and if used chopped 2 quarts should be a plenty for 26 persons.
