A little cheese grated over the biscuit first adds zest and makes a variation. Baked egggB are a very welcome change from the inevitable boiled. Butter a baking dish and pour in a little milk or cream. Into this drop the eggs and bake in a pan o f water until set, not too hard, season well. Crisp bitB o f bacon and a little bacon fat placed in the dish first instead of the milk makes a delicious com bination. Scrambled eggs are always popu lar. Chipped smoked beef, frizzled first, grated cheese, parsley fine cut, tomatoes, peppers, corn, ham. or ba- com well fried, in fact, almost any bits of meat left over from a pre vious meal add tremendously to the taste o f the "scram ble” and make the eggs go farther. W here clams or oysters are plentiful, a favorite dish is made by first frow n in g the clams or oysters, then pouring in the beaten eggs, stirrin g until set. Did you ever try rice, eggs, and cheese? It is a capital supper or lunch dish, both attractive and nour ishing and not hard to prepare. Boil the rice (Southern style, in plenty o f salted w a ter). When done, mold In a platter, garnish generously with circles o f hard boiled egg and pour over the whole a thick cream sauce into which a generous supply of cheese has been melted. Season well. Hard boiled eggs, sliced or halved, placed on buttered toast or crackers and covered w ith a well seasoned white sauce make a delicious dish which Is easy to prepare. Tomato sauce may be used Instead of the w hite sauce, or cheese may be added to the w hite sauce. Leek f e r a —it it The 'bedspring L U X U R IO U S Poor Beds are Robbers o f Energy “ W e grow so accustomed to some discomforts that we fail to realise them,' ’ points out a great physician. A s aa instance he cites the modem bed equipped with the ordinary coil, woven wire or national spring. These bedtprings, even when we are young and strong, gradually rob us of strength and vitality. It is in middle age or during illness when we become acutely conscious of the discomfort that has been sapping our energy. These springs do not allow the body to reet naturally; the hips and should ers sink down, and there is no sup port for the small of the back and the neck. Hence backache and stiff neck which are often mistakenly attributed to other causes. In order to lie on such a bedspring the body must al ways be under tension— there cannot be complete relaxation. N o matter in what position one may attempt to nney - R ome C compose oneself, he must soon shift in his sleep to correct the spine-twitt ing tendency or suffer pain and stiff ness which will soon wake him up. No wonder one feels tired and unrested after a night on such a bedspring. The escape from such conditions is, or should be, obvious. Select a bed- spring that literally molds itself to the body awl supports all parts easily—a bedspring that will not sag into great depressions but will always remain resilient. Such a bedspring is the Rome. De Lame —designed to con form to the exacting standards of phy sicians, anatomists and hygienists. Examine the Rome O s £ a » at your deal er-».
