The characteristics of potatoes as to keeping quality and general excellence become very apparent about this time of year and should be borne In mind hen the question of seed for another crop conies up. Potatoes of a corky appearance or touch are usually preferred to the smooth and clear skinned tubers. Thin appearance or touch Is In some In stances m variety characteristic, but tn .tamcbs rUBKB SHOWING BI5 BUPTCBKS. general It indicates a degree of matu rity or development which promises good cooking quality. On the other band, the potatoes of smooth and clear skin are oftentimes excessively wa tery or Immature. The presence of lentlcels that Is, bodies of cells which during growth enlarge and rupture the sklu Is not ob jectionable, for they usually Indicate normal growth and development In a healthy environment In an Investigation of the quality of potatoes carried on by J. W. CUniore at the New York Cornell experiment station parts considered in the physical ' examination were the surface or skin, the cortical layer or portion Immedi ately under the skin and varying from .1 to J6 inch In thickness, the external medullary area that is, the main starchy part of the tuber and the in ternal medullary area or central por tion of the potato, which often branches Into the external medullary area and Is more or less translucent on account of Its high moisture content As regards the skin. It was noted that uneven tubers with deep eyes were un desirable for market, while a netted akin Indicated maturity and, as a gen eral rule, good quality. A smooth skin indicated Immaturity, and hence poor keeping quality and a tendency toward undesirable Savor. Scabby potatoes were often mealy and of good color, but undesirable from the market stand point Tubers which had grown in part exposed to the air were heavy and sogcy wheu cooked and of poor color and undesirable flavor. In general It was found that when the cortical layer is thick and dense the tubers are of poor quality, and this condition is sn Indication that they grew near the surface, where the tem perature and moisture conditions were more variable than deeMr in the soil. A uniform external modiillnry area In dicates an even distribution of starch cells and of starch grains within the cell. When this layer is not uniform it is an Indication that the starch cells are unevenly distributed and Inter spersed with watery areas. A large A Commission Man's Views For the Benefit ef Producers. K. financially, but "there are black sheep in all flocks" is an old saying and very true, so take the time to look up the commission man financially, and if you find lilm right then go ahead. In handling live stock perhaps more than in any other line of business a man must be alive to the situation and ready to take advantage of every point which will aid him in making a suc cess of the business. In connection with this I am remind ed of a story which ia told of the old fashioned horse doctor who told his assistant to administer powdered bo rax to a horse by blowing it down his throat through a tube. Later, when the old doctor arrived on the scene, he found the assistant choking and spit ting in an unseemly manner and on in quiry was Informed that the horse blew first Equally so In the live stock business is misfortune apt to come to him who allows the other fellow to blow first Don't Tie Up the 8lmn. One other vital point I wish to- call your attention to. Don't put any strings on your commission roan. If be who is on the market every day does not know more than you, when you do not go on the market more than three or four times a year If be does not know bow to handle It in every way to get you the "high dollar" and when to cut loose, be is not the man to ship to, for you pay him for knowing more than you do, and if be does not It Is time to bunt another salesman.
