There seems to have been au u n ­
necessary am ount of excitem ent
aroused by the fact th a t rattle­
snakes were served at a recent
supper iu this state at which a
party of autom obilists participated,
says the P hiladelphia Inquirer.
T he eveut would have caused no
comment iu the w ilds of Pike
county, for the reason that where
the rattlesnake lives he is respec-
ed. He is not fooled with because
his fangs contains poison. But
when he is once dead he is a very
succulent addition to the table.
T he point should not be over­
looked th a t in the last agonies of
death the rattlesn ak e has a way of
biting himself—com m itting suicide
to end his miseries. 1 h such cases
it would he to say the least, moat
im prudent to eat the poison-im­
pregnated flesh. Hut it is satis­
factory to know th a t in such
cases the flesh turns green and can
easily be detected.
T he rattlesnake is one of the
most edible of his tribe. In the
south he is most esteemed as s
diet. He lives on squirfels and
inice and birds, and is not the
dangerous creature most persons
im agine. On the contrary, he is
the highest of all snake creatures,
liecause he gives plenty of w arn­
ing and does not desire to attack
or to be attacked. H e is best
eaten after he has been dried and
cured, m uch after the m anner of
codfish. In the south there is a
fine way of sm oking rattlesnake
flesh, with the result th a t when
you eat him there is a sort of
sm oky, gam y “ je ue sais quoi!”
flavor that is at least enlivening—
especially when you find out what
you have been eating.
