N C2J I m SaHjj gtomn. ASTORIA, OREGON: FRIDAY.. FEBMJAKY 10. 18S3 FOOO ADULTERATIONS. The governmental analysis of lard packed at Chicago shows that it is largely adulterated. This Chicago packed lard is sold all over this coast, and whether cotton seed oil and beef fat are inferior to hog's fat tried out and put up for export, tho fact re mains that wholesale and retail pur chasers pay for what they don't get. This adulteration is universal in the east This last remark may seem to be a sweeping one, but the fact warrant its use. Adulteration of manufactured food, where possible or profitable, is universal there. Tea, coffee, butter, sugar, lard, mus tard, pepper, canned fruits, jam, jelly, canned meats, eta, are all more or less adulterated in the east The canned products of this coast, vegetable?, fruit, salmon, etc., aro all pure. Vegetables and fruits canned in Cal ifornia, and com canned in Maine are usually of pure condition. But the great bulk of manufactured articles of food arc adulterated. Take one article that every house keeper either puts up herself or buys raspberry jam. A man recently happened to bo in conversation with a Boston manufac turer who makes raspberry jam on a large scale, and asked him where the raspberries were raised that he made his product of. The gentleman was in a position to warrant tho confidence of the manufacturer and the latter told him frankly: '"Why, we don't use any raspberries at all." "Do you mean to say that you make raspberry jam without any raspber ries?" "Certainly." "What is the process?" "Why, we boil tomatoes, and then strain the product to get tho seeds out Tomato seeds are quite too big to look liko raspberry seeds, and, be sides, arc not shaped liko them. Then we add about an equal quantity of glucose, and mix in a little prepared raspberry flavor that we buy from the chemists, and also a quantity of hay 6eed. The hay seeds look very much like raspberry seeds, and are bo sides much more nutritious than tho raspberry seeds and constitue a posi tive merit in jam. With a little furth er preparation, our raspberry jam, made out of tomatoes and glucose, is ready for the market" There you are; hay seed, tomatoes, and glucose. "Raspberry jam." This is not as bad, however, as plas ter of paris, lead, brick dust, whito earth, and other delicacies mixed in with food adulterations. The subject is a wide and growing one and touches so largely on the pub lic health as to be of prime import ance. A New Way to Make Cam. An ingenious improvement in tho manufacture of tin cacs for preserv ing foot is being introduced, tho plan consisting simply in so forming the lid that it is merely pressed on, and the can is hermetically sealed, so that no internal pressure can remove the lid. Water boiled in a tin tlins closed has failed to open it off, although the steam pressure has burst the r.n it self. A penny piece however. e .l as a lever by being placed nn 1 r n rim formed around the top of th. .-over, with the shoulder of the cm : . ,i f i! crnm, raises the lid with :i remarka bly small expenditure of power. The principle involved in the devise is that of the wedge and lever. The neck of the tin on which the lid fits is formed at a very slight angle from the vertical, and the rim of the lid is made at a corresponding angle, no solder being used to form the joint. By means of this arrangement, there fore, the opening of cans 13 rendered a remarkably clean qufck and simple operation, contrasting greatly in these respects with the inconvenient method of opening now in vogue. Bowdttcu in Troy Times.l It is probable that many of the fair, and at least an equal number of the un fair sex, have scarcely bestowed a thought uPn the fact that 1888 is leap year, in which the ladies' law. as it is called, may prevail. In three years ont of eTery four, man has the privilege of "popping the ques tion, and the annoyance of sometimes having a plain-spoken "No" for the reply. On the fourth year woman may propos;, if it so please her. A lady has the privilege in leap vear of suggesting marriage between herself and a bachelor acquaintance. In the event of ms reiusrag, tne penalty is that the un gallant gentleman shall present the ten der damsel with a new silk dress. There is a reservation, however, thnt tho right to claim this penalty depends uu iue circumstance mat, wnen sno pro posed, the damsel was the wearer of a scarlet petticoat, which (or a little of the lower portion of which) ahe must exhibit totho gentleman, the understood idea being that the silken dress shall cover the petticoat, and thus assnage dire feminine indignation at'the rejection of her offered hand. If anv of the readers of the Times catch a glimpse, in 1888 say in a high wind, or when a carriage or car is entered or a muddy street crossed of the slight est bit of scarlet in a lady's most com fortable and usually nnexbibited garm ent, they may imagine that she has quitted the house with the dire intent of asking somebody to marry her, or of get ting the silk dress mentioned. It is said that, in a work entitled "Courtship, Love and Matrimony," pub lished in 1G0C, ten years before the death of Shakspeare, is this explanation regard ing ladies' privileges in leap year: "Albeit, it is nowe become a part of the common Iawe, in regardu to social relations of life, that as often as every bissextile year doth return, the Iadyes nave ine sole privilege, during the time it continueth, of making love unto the men, which they do, either by wordes or lookes, as to them it seemeth proper; and, moreover, no man will be entitled to benefit of clergy who dothe in any wise treate her proposal with slight or contumely." This quotation is given by a corres pondent of "Notes and Qusries." but there are some words in it which were scarcely in common nse in Shakespear's time. "Social relations of life" is a compara tively modern phrase; and though the word "relations" is used once by Shak speare, "social" never was. Oddly enough, the word "contumely," though not given in "Ayscough's Concordance," occurs in "the proud man's contumely," which is put into one of HamleCs most thoughtful soliloquies. The following is the statute in the old Saxon code referring to leap year: "Albeit, as often as leape yearre dothe occur, the woman holdeth prerogative over the menno in matters of courtships, love and matrimonie; so that, when the lady proposeth, it shall not be lawful for the man to say her nae, but shall enter taine her proposal in allgude curtesie." A Scotch statute of 1228 read as fol fel fol eows: "It is statut and ordaint that during the reine of her maist blessit majesties ilk forth year, known as leap year, ilk maiden ladye of baith high and low estait shall have liberty to bespeak ye man she likes; albyit, if he refuses to take her to be wif, he &hall be mulotcd in the sum of one pound (1) or less, as his estait niai be, except and awis if he can mane it appear mat ne is betrothed to one women, and then he shall be free." Leap year naturally makes us think of marriage; and we hope all the yonng ladies and widows will be bold enough to "pop tho question," and do it without blushing or stammering.
