The office of the Daily and Weekly Herald has been re uioyed into the Foster block up stairs in the rooms formerly occu pied by the Masonic lodge, where larger and more commodious quart ers have been fitted up. Patrons of the paper will please observe the change. MILK, BUTTER AND CHEESE. The best and most profitable manner of dealing in the above named commodities, is one of the questions that very particularly in terests the citizens of theWillamette Valley, and Albany and its conti guous country especially. No other locality can be found that is so finely adapted to the production of these articles, and the per'.inent query is why does their production remain, as it does, in the very primitive modes, while other branches of industry are fu'ly abreast of the times. That better modes prevail is un derstood by all; then why not adopt them. For a sample of these modes take for instance the Onon daga County Milk Association of New York, which supplies the city of Syracuse. It is the result of the bonding together of 18 farmers in 1871, and now consists of 80 stock holders. Forty of these own their own farms, and bring milk to the building, while the remainder sell their product to the company and rent stock. The milk furnished by all these is the product of 2,000 cows. We glean from the New York Tribune some of the workings of the association which may be of interest : "The association now handles upward of 14,000 quarts of milk daily. The bulk of this enormous quantity of milk and cream is, of course, supplied to customers throughout the city, but the bttbi uess of the company by no means ends at this, for the supply is not limited to the quantity consumed in this way. On the contrary, it is largely in excess ; but whether it is 100 or 1,000 quarts, not a single quart is carried over to the next day's supply. The amount left over alter the regular patrons are served is used in the manufacture of ice-cream, butter, and cottage and factor' cheese. The manu facture of these products of the dairy is reduced to a science by the improved mechanical appliances employed. The association runs some twenty-five or more routes, requir ing forty drivers and as many wagons to do the same business that formerly in private hands necessitated twice a3 many men and teams. It can be readily seen that on this item alone there is a great saving of time and money As one ot the results ot this co operation and divsion of labor, the cost of sweet milk to the consumer has been reduced from S cents to 5 cents per quart since the organiza tion of the company ; ana even a lower figuie than this is obtained by hotels and other big purchasers And yet the association is able to pay bandsomelyon the investment. ine net receiota. after fine lodgment in any of the seams or crevices. They are then stood in rows, with the" covers off, until all moisture is evaporated. This operation leaves them clean and dry and as bright as a silver dollar. And it is no wonder that this "washing process" is one of the biggest cards of the association, for ! "cleanliness is next to godliness" even in milk matters. Utt from the receiving-room is a department where the milk which has to be kept over night in sum mer is stored. The temperature of this room is kept at 40 decrees, and the milk cans are set in cold water . tanks. i Under the building and the side-' walk is the huge basement, where 1 the surplus milk is worked into! muter, cheese ana ice-cream. There are two main appartments, one of which is used for a butter and cheese factory, and the other for the making of ice-cream. In the cheese and butter-room there are vats, churns and cream separators. Three large vats, with a total capacity of (5,400 quarts, are ket in use in the making of cheese ; also a churn which will roll out from 150 to 210 pounds of butter at a churning. About 800 pounds of cheese and 400 pounds of butter are made daily. The cream separators are a perfect wonder. They resemble a covered pan, and separate the skimmed milk from the cream with lightning rapidity. These machines are u?ed for "working up" the surplus milk of the association. The courts of Georgia are now worrying over a casa of miscegna tion, the marriage of a white man to a colored woman. The man was a citizen of Liberty county of that state, and finding that he could not legally marry the colored woman under the laws of Georgia, took her to the district of Columbia and married her, and then return ed, when he was indicted and the case is pending against him for un lawful cohabitation. The reason of the change is that its farmers can get 2 cents per quart for all their milk, which price yields more money than they could get from butter, so they sell their milk and buy their butter. Rev. The average amount re ceived is about 3 4-10 cents per quart. Here again the farmer is a great gainer by the arrangement, for he is spared all the trouble of peddling his milk, not to speak of the loss on "bad debts," and the daily exposure during four or live hours in all sorts of weather. And now a word as regards the buildings in which the association carries on its operations. The main building is a rather unpre tentious four-story structure, situ ated on East Fayette street, near the heart of the city. It is arranged with every convenience for the rapid and cleanly handling of the inilk, and has, in addition, a per fectly equipped dairy establish ment. The milk brought in by the farmers is placed upon a car and run to the scales to be weighed. This way of handling and credit ing milk received is found to be much more expeditious than meas uring by quarts or gallons.
