It's more than a matter of luck, your success In cake baking; It's choosing a good recipe and fine ingredients; blending those Ingredients with a light and knowing nand; and bak- lng the cake to bring out Its finest flavor, to make it moist, light, golden-brown and delicious to the last crumb. This "Black Angel Cake" Is an unusually good chocolate cake that keeps well If you can find a safe spot for It! Choose, for your -ake, the best Ingredients, combine them with care, then trust the baking to the accurately controlled heat In the oven of your modern electric range. Pour batter Into a (reaped, fl-lnch layer pans, and bake In a moder ate n.en with the electric thermostat set at SoO degrees, (or about 30 minuses. Re move from pans, cool, and frost with Seven Minute lclni, a Cut angel food cakes or sunshine cakes with a silk thread, or pull the cake gently apart with two forks. When cutting a round cake to serve a number of guests, cut an In side circle, first, half way between the center of the cake and the outer edge. Then cut 13 pie-shaped pieces from the Inside circle, and 24 pieces from the outside circle. Cut a square rake Into 10 equal squares, then cut across the cake, diagonally, to divide each square Into triangular pieces. Divide a rectangular cake Into S equal, lengthwise strips. Then, starting at one corner, cut througn the strips diagonally. If a bit of egg yolk gets Into the whites, It may be removed with a piece of the shell, or with the cor ner of a damp towel. To hold an angel food tin In place while the cake cools, turn a funnel upside down, and Insert the end In to the tube of the pan. Remember that a bit of salt Is needed In cakes to bring out the flavor of the Ingredients. Feanui Butter Balls 4 tableipoone white or urn ahem 3 tableipoone peanut butter Mi teaspoon salt U tenepoon paprika 1 teaspoon salad drenlnr rolled toast, erumbs (or awelback) - Mix Uie cream with the peanut butter, seasonings and dressing. Shape Into 9i Inch balls and roll to the crumbs. Chill and iervt on the aalad plates. Easy-lo-Prepare Luncheon Given Here's a luncheon as easy to serve ts to prepare. Lunch for Four Bam Shortcake Spiced Cantaloupe Buttered Aiparatiia Cheese Bara Current Jam Merlniut Pesierl Bam Shortcake 4 tablespoons fat 4 tablespoons flout U teaipoon aalt $k teaspoon paprika 1 tesipoon chopped variler 3 cupa milk oup diced cooked ham i hsrd-cookfd esss, dlord teaspoon finely chopped onlona Melt fat and add the Hour. Mix lecll and pour In the seasonings and milk. Cook slowly and stir constant ly until a creamy sauce forms. Add other Ingredients and simmer five minutes. Meringue Deseert 4 tableipoone butter Vi cup granulated euiaf U cup orama Juice Vt tesipoon lemon extract teaspoon salt 5 eat yolks, beaten VA cups pastry flour 1U teaipoons baklnt powder Cream butter and sugar. Add oth er Ingredients and beat two minutes. Four Into a shallow pan with waxed paper fitted into It. Cover with the meringue. Meringue t etf whtlfi, beaten U eup tranulated imar tt cup shredded nun (almonds uiieit td) M. teaipoon lemon extract M teaspoon irated oransa rind Beat whites until stiff. Add sugar Bind beat until very creamy. Add other Ingredients. Roughly spread ever Uie cake batter. Bake 35 mln utes in a moderate oven. Let stand live minutes In the pan. Fruit Cookies W cup fat (part butter) 1 cup dark brnwn auaar 1 tablespoons buttermilk or lour eraam 1 teaspoon vanilla A teaspoon sail X teaapoon cinnamon V teaspoon clovea M eup raisins J, eup chopper dates A cup nuts (optional) 2 eass, beaten I cups flour 1 teaspoon aoda Cream fat and sugar. Add other ingredients and mix lightly. Chill dough and then drop portions of It from the Up of a spoon onto greased baking sheet. Flatten each cooky with the back of a knife dipped In cold water. Bake ten min utes In a moderate oven. A Gummy Frosting For a real gummy frosting, spread layer or loaf cakes u soon as they re removed from the oven with sliced candy gum drops make up your own choice of flavors.
