Prepare ready-to-mix corn munins and bake. Prepare meringue for baked Alaska. Mnke coffee. Before clearing IlrsC course, arrange Ice cream on sponge cake, cover with meringue and bake. Pineapple Mint Sauce 1 cup crushed pineapple 1 cup sugar cup water Green coloring S drops oil of peppermint Simmer pineapple, sugar and wa ter ten minutes. Cool, color and add pippermlnt. Chill before scrvlnn on Ice cream. Baked Alaska 1 pint Ice cream 1 sponge cake 3 egg whites Salt 3 tablespoons sugar 1 tablespoon vanilla Remove center from top of cake. leaving a shell at lenfit three-quar ters of an Inch In thickness. Fin witn tee cream. Cover with a meringue marl bv beatlnor eRK whites stiff and adding salt, sugar and vanilla. Bake in a hot oven, 450 degrees Fahren heit, until light brown, about five minutes, and serve at once. Vicnic Season Opens On Decoration Day By Edith M. Barber Decoration day which will be celebrated next Thursday will officially open the picnic season. Let us hope that the weather man has made a note that the sun must be turned on early and be ordered to work overtime. Those of us who have planned to cook outdoors for the first time this season must not be disappointed. ', I shall be trying out a new char coal stove which has recently been sent to me with enough fuel to take care of all the outdoor meals of the summer. It is a compact, folding grill which can be set up on Its own legs and has a rack long enough to cook steaks lor a number of per sons. If you go in for outdoor cook ing seriously, you may prefer anoth er type which allows steaks to be cooked on the shelf above the two fires. There is another kind, which however, is difficult to find, but which I like very much, because It has provision for baking pota toes or corn underneath the grill. The best way to start a charcoal fire is to crumple newspapers into small balls before putting them in the fire box. The charcoal should then be sprinkled over this and the paper balls lighted. There should be plenty of red coals before cooking is begun. I like to sprinkle the coals with a little water, as this prevents the fat catching on fire and slows the browning process Just enough. Over a charcoal fire meats should be turned frequently. A steak, one and one-half inches thick, will take from ten to 12 minutes to become rare. The time will depend upon how you like your steaks. Hamburg pat ti and frankfurters take a shorter time, of course. The time for chops depends upon tneir inicuness. If you are planning to fry pota ies this should be done before the meat as they can easily be re-heated. The coffee may be started with nr.A water, while the potatoes are cooking and allowed to come to a boil. It should then be stirred, put to one side and allowed to settle while the meat is cooking. If you are planning to serve your meat in sandwich form, bread or lolls may be toasted in a few moment after the meat Is ready. With potatoes and meat, you will need only a salad, the materials for which may be prepared at home and ,,t. together when you are ready. nessert may be cake, rhubarb pie, .! or fruit. Add j.ir0H unntzhettl. heat thoroughly, sprinkle with sliced stuffed olives and serve. , Hot Hamburger Sandwiches 1 onion, finely chopped 1 fnhlpsnnnn butter 1 pound round steak, finely chopped 1 tablespoon salt y teaspoon pepper 2 tablespoons flour 1 n mtllr Cook the onion In the butter two minutes. Add tho meat, salt and pep per and stir until brown. Stir In Hour and add the mllK ana stir unin iniu. Servo on slices of buttered toast. Coffee Nut Cake cup shortening 1 cup sugar a tablespoons water 3 eggs cup chopped null Ml 2 cups cake flour U 3 teaspoons baking powder Va teaspoon Bait V. cup strong coffee Cream shortening, stir In sugar gradually and cream together until light and fluffy. Add water to eggs and beat until light; add to creamed mixture and beat well. Add nuts and blend. Stir In flour, which has been sifted, with baking powder and salt, alternately with the coffee, beating after each addition until smooth. Pour batter Into two 8-Inch greased layer cake pans and bake In a moderate oven (375 'F.) 30 to 35 minutes. Ice with mocha frosting. Mocha Frosting cup butter 4 cups sifted confestloner's sugar, yt teaspoon vanilla yA teaspoon salt 1 ounce unsweetened chocolate, melted li run Rtronff coffee BOOUt) cream Duller, sur iu un uic bu gradually, blending well after each addition. Add vanilla, salt and choco late and mix well. Stir In remaining Bugar alternately with the coffee un til of right consistency to spread. Beat well after each addition. Vegetable C,oulall cup salad oil 2 green peppers Wtf 2 onions fa", 8 tomatoes or 1 can salt, pepper minced parsley Heat the oil. Slice the vegetables. Cook the peppers and onions 5 min utes and add tomatoes. Cook until the tomatoes are soft. Just before serving add minced parsley to taste and seasoning. Franconia Potatoes 8 tablespoons bacon fat 8 peeled, cooked new potatoes 4 teaspoon salt i,i teaspoon paprika Heat fat in a frying pan, add po tatoes and brown them well on all sides. Sprinkle with the seasonings and serve Immediately. Independence ' Club Has New Officers Independence At the closlnR meeting of the Woman's club for the season Tuesday afternoon, a large crowd was In attendance and the following officers were Install ed for the coming season: Mrs. C. A. Fratzke was installed as presi dent by the retiring president, Mrs. I. D. Mix; Mrs. Paul K. Robinson, first vice-president; Mrs. C. O. Slo per, second vice-president; Mrs. Tom Ritchie, secretary; Mrs. Joe Rogers, Sr., treasurer. Annual reports of the standing committees were heard. The new officers will take over In October and the president will announce her committees at that time. New programs will be prepared by the program committee with Mrs. Char boneau in charge. The executive committee acted as hostess for the afternoon. Asparagus with Lemon Buffer 1 pound nsparagus i cup butter 2 teaspoons lemon Juice 14 teaspoon paprika teaspoon salt Wash asparagus and discard tough ends. Tie asparagus in a bundle and steam for 20 minutes. Place in a heated serving dish and cover with other ingredients, mixed together. Serve at once. If you want Ivy clippings to sprout, place them in jars of water and keep them in the light. They will sprout within a week or so. Re plenish the water daily. When sprouted, transfer the Ivy to bowls for house or porch decoration or plant It out of doors. To clean pewter utensils, rub them I with a brass polish applied on soft brush or cloth. Polish with a soft cloth until shiny.
