The answer lies in ice box dishes that supply the nececssary nourishment with a minimum of work. A well concocted Ice-box entree or salad may be many courses rolled into one truly a meal in H slf. Most people are satisfied not to have a great many courses in hot weather, particularly at lunch eon. A one dish meal with iced tea or coffee, dessert, and perhaps - a plate of sweet cookies to finish off with, is usually enough for any. body's appetite. Below are several entrees for the warm weather days: - FROZEN TUNA AND RICE 14 cupB tuns fish 2 cups b teamed rice 1 cup liny peas 4 Tablespoons mayonnaise Salt Combine nil ingredients and place in freezing trays of ice-box. This mixture should not be frozen at too low a temperature. Serve on let tuce with mayonnaise, garnish with tomato slice or strip of pimento. Serves 8. Chicken may be used in this recipe in place of tuna. Stuffed Errs In Tomato Aspic 4 reus, hard cooked - 4 tablespoon mayonnaise k teaspoon salt Paprika 3 cups tomatoes 1 teaspoon k rated onion H teaspoon paprika 2 teaspoons sugar 4 teaspoons gelatin cup cold water Cut hard-cooked eggs In halves lengthwise and remove yolks. Mash yolks with mayonnaise, salt, pepper and paprika, and re-fill whites. Soak gelatine in cold water. Cook tomato and seasonings and put through strainer. Dissolve gelatin in hot liquid. Coll, fill mold with layers of stuffed eggs and tomato Jelly, letting each layer harden be fore adding the next one. Chill in refrigerator until firm. Serve slices on lettuce hearts. Serves eight. For a variation two cups of potato sal ad may bo used instead of the eggs. FROZEN SHRIMP OMELET 3 ecca to to 1 cup flaked shrimp Salt and pepper Wash and clean shrimp and flake with fork. Beat yolks of eRgs until thick and lemon colored add whites until stiff. Add shrrimo to the yolks, season to taste and fold Into whites. Place in refrigerator tray and freeze. Serve four to six. Mix well and add tomatoes and cook until a thick sauce forms. Add rest of ingredients and mix well. Pour into buttered baking di::h and cook 25 minutes in moderate oven. Serve in dish in which baked. MUJ.OIV CAKE 2-3 cut fat l'a cups Migfir 3 O'tk yolks 1 cup cold water 1 tcsmpoon vnnllln 1 teaspoon lemon extract U teaiipoon salt 3 ciipn flour 3 teaspoons linking powder 3 ettti wlilUm, bcfiton Cream the fat and sugar. Add yolks, water, extracts, salt, flour and baking powder. Beat 3 minutes. Fold in egg whites and pour into 2 layer cake pans lined with waxed papers.
