It is claimed that there are more than 100 ways to cook potatoes, from the primitive (and still probably the "best) methods of boiling and baking Tvith the skins on, to the most com plex and seasoned dishes. Here are some of the ways known to the U. S. Department of Agriculture. Have you tried them ell, or do you know about as many more? Boiled Chips Lyonnaise Mashed Pan Browned Salad In chowders Baked Shoestrings Hashed browB Mashed fried Stuffed In tih cakes In light bread MEAT 'SUBSTITUTES. Vish Chowder. A 3-lb. fish, 4 tablespoons drippings, 1 medium onion, chopped fine, 1 quart sliced potatoes, 3 cups hot milk. Skin and bone the fish, and cut into inch cubes. Cover the bone and trimmings with cold water fend let simmer for one-half hour. Cook the onion in the fat for E minutes, then pour into a stew pan. Parboil the sliced potatoes for 5 minutes, then drain and add layers of fish and potatoes to the fat and onion in the stew pan. Season each layer with salt and pepper. Strain the liquor in which the fish bones have been cooking over all, and cook about 20 minutes until fish and potatoes are tender. Then adej the scalded milk. If desired thicker, sprinkle a little corn meal between each layer of fish and potatoes. Baked Salt Fish. 2 cups salt fish (flaked), 2 cups cold mashed potatoes, 1 pint milk, 2 eggs, 2 to 3 tablespoons of drippings. Soak the flaked fish in cold water over night or freshen the fish by boil ing up several times in fresh water (usually 3 times is sufficient). Then simmer until tender. Drain off the water. Mix the potatoes with the milk, eggs, fat and seasoning. Add the fish, turn into a greased baking dish and 'bake one-half hour. Broiled Salt Mackerel. Freshen the fish by soaking 10 to 12 hours with the skin side up. Change the water several times. Sim mer until tender (15 to 20 minutes) in water to which 1 teaspoon of vin egar, a bay leaf, one slice of onion and a sprig of parsley have been added. Drain, rub the fish with a little salt and margerine or other fat. Grease the hot broiler and lay the fish on it. Brown on both sides quickly. Garnish with slices of lemon and parsley. Jollied Fish. Vz cups cold flaked fish, 2 tablespoons chopped capers, 1 tablespoon granulated gelatin, 1 cup boiling water, 2 tablespoon lemon juice, 14 teaspoon salt, 2 tablespoons cold water. tSESiuilEjZI j? Margarita Fischer, tho brilliant comedienne, is noted as ono of the most fastidious dressers in filniclom, and docs not hesitate to exploit any original ideas, tho result being that she is seen in somo startling and novel creations. Miss Fischer appears in "Molly Go Get "Em" at the Grand Theatre on Wednesday only, In the Mutual American production, in which she takes the part of a fun-loving girl of an adventurous spirit, she wears a suit of pajamas that Is just a few parasangs ahead of the latest con- coctioiiB in this interesting garment It is Oriental In genus, Mongolian In specie, and is the only copy of a pair worn by the pampered daughter of a wealthy mandarin who took a violent fancy to Miss Fischer during a so journ at Santa Barbara. The nether garment is of black silk, rather loose fitting and some what shorter than the ordinary kind. The coat is of cream-color, sleeves full and short, whllo worked liito the texture are symbolical Chinese char acters, the meaning of which Is a sealed book, except' to the deep stu dent of Confucius. The costume Is topped off by a mandarin hat that sets raklshly on Miss Fischer's raven locks. The first night Miss Fischer wore these Oriental habiliments she dreamt of hydra-headed dragons of emerald hue, with Indigo tails which they manipulated as chop-sticks in devouring huge tankards of chop-suey. Iilbrrty Theatre. Jane Cowl, the heroine of "Within the .Law" and "Common Clay," and one of the foremost of American dra matic actresses, comes to the Liberty Theatre tonight and Wednesday as the star of the Goldwyn production of "The Spreading Dawn." This is the first screen appearance of this noted beauty, actress and dramatlist. The Spreading Dawn" is a pictur- ization of a remarkable story by Bas'l King which, when it was published in the Saturday Evening Post attract ed oountry-wide attention.
