Noth ing suits that too-hot-to-fuss mood like a good cold soup. Soup for summer chilled soup is a growing favorite with the more-fun-in-the sun set. It's simple to prepare, yet it adds an epicurean touch to the summer lunch and dinner menu. It saves time in preparation, time in a hot kitchen, and yet it adds an elegant extra course and the great distinction to the cookout or the terrace table d'hote. There's a cold soup for just about every occasion. For cocktail or appetizer, for example, soup on the rocks. This is condensed beef broth poured undiluted over Ice cubes, with lemon peel added. It's a quick, refreshing, low-calorie pickup. Jellied consomme is perennially popular, tangy and esthetically satisfying with its icy shimmer. Cream soups of all kinds, often fortified with milk, make for an appealing soup course or even an entire meal. Add eggs to a cream soup and shake to make a soup "nog," good almost any time of the day. Canned condensed soups need only a few hours in the refrigerator to be prop erly chilled and ready for serving, or for easy mixing with cold water or milk. Gar nish and seasoning can be added immediately to suit any fancy. There's no work at all to preparing canned condensed consomme. Put it in the refrigerator. It jellies itself. Jellied Consomme Chill unopened 10'i ounce can condensed consomme in refrigerator for at least 4 hours. Open can and spoon consomme into chilled bowls, sherbet or parfait glasses. Garnish suggestions: lemon or lime slices; snipped watercress leaves folded into sour cream; chopped cucumbers mixed with chopped parsley. Accordion Sandwiches EGG-WATERCRESS SPREAD 4 hard-cooked eggs, chopped cup snipped watercress leaves 2 teaspoons prepared mustard Salt and pepper to taste Mayonnaise 8 slices white bread Combine ingredients with enough mayon naise to make mixture easy to spread. Re move crusts from bread: spread mixture on each slice. Creamy Dried Beef Spread . 1 package (3 ounces) cream cheese softened 2 to 3 tablespoons minced dried beef 1 teaspoon prepared horseradish 4 slices white bread Blend cream cheese with dried beef and horseradish. Remove crusts from bread; spread with mixture. To make accordion sandwiches, alternate 3 spread slices egg, cheese-beef, egg and cover with plain but tered slice. Make 4 stacks. Wrap in waxed paper; chill until ready to serve. Cut each stack into 2 or 3 pieces. Arrange on plate with filling side turned up. Makes 8 to 12 sandwiches. Chilled Garden Cream Soup 1 can (10V4 ounces) condensed cream of celery soup 1 soup can cold milk V cup snipped watercress V cup diced cucumber, chilled 1 tablespoon sliced green onion Dash tabasco Sour cream, if desired Keep can of soup in refrigerator S to 4 hours. Just before serving, open soup; pour Into electric blender. Add remaining ingre dients, except sour cream. Blend until smooth. Serve in chilled bowls or glasses. Garnish each serving with sour cream, if de sired. Makes 2 to 3 servings. Luncheon Meat Bunwiches 1 can (12 ounces) luncheon meat 6 hamburger buns, split Tomato slices Green onions Mustard Mayonnaise Cut luncheon meat Into 12 thin or 6 thick slices. Arrange on bottom halves of buns that have been spread with mustard. Top with tomato slices. Split green onions in half, lengthwise; place 2 or 3 halves on top of tomatoes. Hours will be 2:30 to 4 p.m. standard, 3:30 to 5 p.m. daylight. No invitations are being sent, but all relatives and friends are invited. The couple has request ed that there be no gifts. Mr. and Mrs. Wheeler were married in 1922 at Leaf Valley, Minn. They moved to Eugene in 1040 from Detroit Lake, Minn. The couple has 17 grandchil dren and six children, including Bert Wheeler, Mrs. Wilbur Eat on, Mrs. Albert Dalby, Mrs. Doyle Eastburn and Mrs. Ramon Fountain of Eugene, and Mrs. Paul Wanner of Woodburn. Its Time for Fresh Fruit Sundaes The ice cream sundae has long been a popular way of serv ing ice cream and fruit. During the summer months when fresh fruits are in such abundance, is a wonderful time to take advan tage of their combination with ice cream. A colorful as well as tasty fruit combination is peaches and blueberries, and when teamed with eenerous servings oi vanina ice cream win give you a sundae that is really deli- cious. No recipe is really necessary for this creation, just a gener ous supply of ice cream in the freezer.
