Add egg yolks and blend well. Pour mixture into prepared pie shell. Cover with meringue. Meringue 2 egg whites Vi teaspoon cream of tartar 4 tablespoons sugar Beat egg whites until frothy. Add cream of tartar and continue to beat until stiff and glossy, but not dry. Add sugar, 1 table spoon at a time, beating after each addition. Spread meringue evenly over surface of pie, taking care to spread it with spatula right to edge of pie. Bake in moderate oven (350F.) 10-15 minutes to brown lightly. Chill before serving. , 30 minutes, until tender. Chill Pull oft leaves and top the meaty tip of each leaf with mixture. Ar range on serving tray. Makes 15- 20 hors d'oeuvres. Almond Bavarian Cream Filling 1 cup milk V cup granulated sugar Vk teaspoon salt 2 egg yolks VA teaspoons plain gelatin 2 tablespoons cold milk Vz teaspoon vanilla extract Few drops almond extract 'A cup whipping cream 'A cup roasted slivered blanch ed almonds Vi cup moist shredded coconut Scald 1 cup milk with sugar and salt. Slowly stir into lightly beat en egg yolks. Cook and stir over hot water until mixture is slightly thickened. Remove from heat. Soften gelatin in remaining milk and dissolve in hot custard. Blend in flavoring. Cool until mixture begins to thicken. Fold in whip ped cream, almonds and coconut. Chill until almost set before spreading. Makes sufficient filling to spread between and on top of a 9-inch angel food cake cut into 2 layers, or a white layer cake. Shrimp and Artichoke Hors d'oeuvres V.s cup mayonnaise 1 tablespoon prepared mustard 1 teaspoon Worcestershire sauce 1 tablespoon finely chopped onion 1 can shrimp, crabmeat, or tuna 1 artichoke Mix mayonnaise, mustard, Wor- Cream a small package of cream cheese with a couple of anchovy fillets and some minced parsley Spread on small crackers and serve with tomato juice for first course. If you've stored homemade mayonnaise in too cold a place and it curdles, you can recondl tion it. Just put an egg yolk in a bowl and beat it slightly; now add the curdled mayonnaise a little at a time, beating it in thoroughly as you do so.
