Molded Tuna and Avocado Salad 1 envelope unflavored gelatin H cup cold water !i cup boiling water 1 tsp. sugar 1 tsp. salt ?i cup mayonnaise 1 tsp. Worchestershire sauce ! to 10 drops Tabasco tbsp. lemon Juice ' cup evaporated milk 1 d-ounce can tuna, drained and flaked 2 medium avocados, mashed and sieved (about 1-Vt cups) Soften gelatin in the cold wa " in a large mixing bowl. Add Wing water and stir, until gela is dissolved. Cool gelatin 'JWy, then add sugar, salt, may onnaise, "Worchestershire sauce, Tabasco, lemon juice and milk. Mix well. Measure 1 cup of this mixture into a mixing bowl and stir in the tuna. Turn into a ,1-quart mold and chill until firm. Add avocado to remaining mix ture. Stir this mixture frequently while it is beginning to jell to keep it smooth. When tuna mix ture is set, turn avocado mixture into mold and chill at least 3 to 4 hours before serving. The recipe for Brown Gravy sauce called for in the Chop Suey recipes is made as follows: Chinese Brown Gravy 6 tbs. drippings from roast beef, ham or chicken. 6 tbs. flour. 2 tbs. soy sauce. 1 tsp. brown gravy sauce. 1 tsp. salt and dash of pepper. i cup cold water. 1 cups hot water. Mix flour and drippings in bot tom of pan. Add sauces, salt, pep per and cold water. Crush lumps and mix thoroughly. Add hot wa ter. Stir well and cook to smooth paste. Pour in hot gravy boat and serve with Egg Foo Yong, cooked or fried rice, biscuits, potatoes. dumplings, egg noodles, chops. roast beef, pork or veal. One beef or chicken boullion cube may be added, and mushroom juice may be used instead of hot wa ter, if available. Add more flour, tables and meat. Mix thoroughly and cook 5 mins. Combine and add flavoring and thickening in gredients. Mir lightly and cook one minute. Serve piping hot with noodles for Chow Mein, or cooked rice for Chop Suey. Flavor indi vidual dishes to taste with Soy Sauce. Garnish or decorate with lettuce, sliced green onions and sliced cold boiled egg, or slender strips of fried beaten egg. Whole or chopped nuts may be added. Mushroom Chop Suey or Chow Mein Vt cup butter or shortening Hi cups (34 lb.) beef tenderloin or lean veal, cut in thin strips 1 cup onions, cut fine 1 tsp. salt 114 cups hot water ' 1 Vi cups canned or fresh mush rooms, cut in Vi pieces 1 can bean sprouts, drained well 116 tsp. pepper 2 cups celery, cut fine Flavoring and Thickening 2 tbs. cold water 2 tbs. cornstarch 2 tsps.
