He has heen prominent In civic and I'nilcd Church work In Salem and in demand as speaker on social problems throughout the state. Active participation in United Church Women's work, especially In Christian education and wor ship, her own particular field, have been a part of Mrs. Kelser's contribution to Salem, in addition to the work done in her own church. More in Celery Second Installment of Recipes Handy Items By MAXI.NE BL'REN Statesman Woman's Editor Recently 1 wrote a rhapsody on enry, and sang nyseff Into such estacies that I couldn't write it all in one atory, so saved a few measures for another day. And this is the day. , We discussed about how a head of celery can be a salad, a soup, a vegetable or a meat accompaniment. Today we give it I whirl as a main luncheon dish and as a simple vegetable. First the latter One Frenchy cookbook devotes several pages to celery dishes for just about every conrse except dessert, I like to in celery In a simple, plain way. Saute Ihecelery cubes slowly In butter and when about done, add some canned or fresh-cooked com and a llllle greea pepper If yen wish, and cook just long enough to heat the corn through. Season with snlt and pepper. I discovered braised celery last year, it uses the very tender outside stalks or the hearts. It's simple but elegantly flavored and a lovely rather dressy vegetable. Braised Celery 3 or 4 celery hearts Salt and pepper 2 tablespoons butter Consomme Split celery hearts lengthwise and saute carefully in the butter, covering the pan if desired. Moisten with the consomme or other stork) Just enough to keep celery from scorching and simmer slow ly for about 20 minutes, letting almost all the liquid cook away. Serve without breaking up stalks. And finally a little bit more complicated dish to serva as a luncheon dish. It calls for tuna, but chicken would be good, too. Tuna and Celery Souffle cup finely chopped celery Salt and pepper 4 tablespoons tapioca Nutmeg 1 cup each, boiling salted water 4 eggs, separated and light cream 1 cup tuna 'Cook celery, tapioca in water and cream until tapioca is clear, stirring lo keep from sticking. Season with pepper and nutmeg and cool. Beat In well beaten yolks and flaked tuna alternately. Fold in beaten whites and some salt. Turn mixture into souffle dish, set pan in hot water, bake 35 to 40 minutes or 375 degrees. Serve with to main sauce. Little Girl Greeted FOUR CORNERS A first child was born November 15, at the Sa lem General Hospital to Mr. and Mrs. Wayne SprigRs (Florence Kathleen Haffner). The little girl has been named Lorl Kathleen and she weighed eight pounds, four and one 'half ounces. The grandparents are Mr. and Mrs. Donald Haffner and Mrs. Edna Thornton, all of Spokane, Wash., and Walter Spriggs, Salem. Great - grandpar ents are Mrs. Kcthleen Plunkett, also of Spokane, and Mr. and Mrs. Edward Spriggs and Mr end M Perry Wiggins, all of Salem. Engagement Of Couple Revealed Announcement is being marie by Mr. and Mrs. H. R. McDonald of .'SliediDOKera daughter, Miss Carol McDonald of Salem, to Byron Michael Conan, son of Mr. and Mrs. B. L. Conan of Gig Harbor, Wash. The wedding is planned for June. Miss McDonald is a graduate of Oregon State College and a mem ber of Alpha Gamma Delia. She is now on the faculty of South Salem High School. Mr. Conan is a senior at Oregon Stale College and his fraternity is Sigma Chi.
