in which Dr. Keiser has been in

Recently 1 wrote a rhapsody on enry, and sang nyseff Into
such estacies that I couldn't write it all in one atory, so saved a
few measures for another day. And this is the day. ,
We discussed about how a head of celery can be a salad, a soup,
a vegetable or a meat accompaniment. Today we give it I whirl as
a main luncheon dish and as a simple vegetable. First the latter
One Frenchy cookbook devotes several pages to celery dishes
for just about every conrse except dessert, I like to in celery In
a simple, plain way. Saute Ihecelery cubes slowly In butter and
when about done, add some canned or fresh-cooked com and a
llllle greea pepper If yen wish, and cook just long enough to heat
the corn through. Season with snlt and pepper.
I discovered braised celery last year, it uses the very tender
outside stalks or the hearts. It's simple but elegantly flavored and
a lovely rather dressy vegetable.
Braised Celery
3 or 4 celery hearts Salt and pepper
2 tablespoons butter Consomme
Split celery hearts lengthwise and saute carefully in the butter,
covering the pan if desired. Moisten with the consomme or other
stork) Just enough to keep celery from scorching and simmer slow
ly for about 20 minutes, letting almost all the liquid cook away.
Serve without breaking up stalks.
And finally a little bit more complicated dish to serva as a
luncheon dish. It calls for tuna, but chicken would be good, too.
Tuna and Celery Souffle
cup finely chopped celery Salt and pepper
4 tablespoons tapioca Nutmeg
1 cup each, boiling salted water 4 eggs, separated
and light cream 1 cup tuna
'Cook celery, tapioca in water and cream until tapioca is clear,
stirring lo keep from sticking. Season with pepper and nutmeg and
cool. Beat In well beaten yolks and flaked tuna alternately. Fold in
beaten whites and some salt. Turn mixture into souffle dish, set pan
in hot water, bake 35 to 40 minutes or 375 degrees. Serve with to
main sauce.
