Nic for lunch with a cooked green vegetable or salad. Sandwiches, hot or cold art the mainstay of most outdoor meals. They may be sandwiches prepared at home, or those made over the fire. Here we open up a can of Vienna sausages, put them between crusty rolls, along with slices of cheese and generous spreading of barbecue sauce. The rest of the menu includes crisp relishes, a melon, pickled beets and a hot beverage in the thermos bottle. Picnickers Say Sandwiches Greatest Outdoor Food The greatest boon to outdoor eaten is the sandwich, la one form er another. It may be the polite kind with two pieces of spread bread neatly put together with chicken, meat or a mixed spread. But chances are it will be a more rugged hamburger, grilled cheese, or some interesting filling combination, more practical for outdoor Informality than the formal dining table. Cut the crusts from a loaf of unsHced bread, opread aae aide with the mixture, and slice thinly from the loaf with a serrated knife. Roll, cut in halves, wrap bacon around each and skewer with a small stainless steel fowl pin or skewer. Cut the bacon the right length to avoid much over lapping. To pre pare, blend a couple of tablespoons of butter or margarine with a quarter-cup of peanut butter. Then mix In sifted confectioner's sugar and add enough not milk to make spreading consistency. Eclairs With Strawberries, Sour Gream Eclairs, thefaverlteofall French desserts, can be easily made in any American kitchen. The dough is quickly mixed and arranged on a cookie sheet with, or without, the use of a cookie press. Then the filling is prepared. And here Is where these eclairs get their distinction. The recipe features spring's plentiful supply of rosy red strawberries and a favorite dairy product, sour cream. The strawberries are sugared be fore they are added to the sour cream. Together, they make an in teresting flavcr contrast in the rich eclair shell. STRAWBERRY ECLAIRS 1 cup hot water Vi cup butter 1 tablespoon sugar 1 cup sifted flour eggs 1 teaspoon grated lemon rind 1 cups strawberries cups sugar JV cups sour cream 3 tablespoons flour S tablespoons corn starch Confectioners' sugar Shells Lightly grease baking sheet. Combine water, sugar and butter in saucepan. Bring to a boil. Add flour all at once. Beat con stantly with a wooden spoon until mixture leaves sides of pan and forms smooth ball (about 1 min utes). Remove from heat. Add eggs, one at a time, beating after each addition until smooth. Continue beating until mixture is smooth and glossy. Add lemon rind and mix thoroughly. Form eclair shells with pastry tube or drop from tablespoons, which have been dipped In cold water, on greased baking sheet. about 1" apart. Carefully form into rectangles, 4 xl . Bake in hot oven, 450 degrees F., for 10 minutes. Reduce heat to 150 degrees F. and bake IS minutes longer or until golden brown. FUliag Wash, hull and sprinkle straw berries with H cup sugar. Allow to stand about one hour. Place sour cream in sauce pan. Stir in flour and corn starch. Heat, stirring constantly, but do not al low cream to boil, for about 3 min utes. Remove from heat and pour into mixing bowL Add remaining sugar. Mix well. Stir in berries. Place In refrigerator to chill. Fill eclair shells with sour cream and strawberry mixture, using ap proximately 1 to 24 tablespoons per shell. Dust with confectioners' sugar. Yield. 16 eclairs. Afternoon Snack. Includes Cupcake Make after-school snack -lime fun for everyone. Decorate cup-cakes andd cookies by writing a day of the week oa each with colorful frosting.
