Lunch Menu With Cheese, Statesman, SaTem, Ore., Fr!., March 29, "57 (Sec. Cream of Oyfter Soup , Creamed Chene Sandwiches : ' Carrot Stick! Fruit Gelatine " Milk . "' C REAM OP OYSTER SOt'P U cup butter . , 2 tablespoon! flour 1 (part milk V pint oysters 1 teaspoon salt V teaspoon celery salt Dash pepper Melt butter in saucepan over 16w heat, blend in flour. Add milk and atir constantly until sauce boils and thickens. Add season ings. Remove any bits of shell from oysters. hop oysters, using chopping bowl; add with oyster liquor to not mixture, heat thor oughly, approximately 18 minutes. Serve piping hot with crisp crack ers or buttered (oast strips. Makes servings. Swiss Rice Casserole Broiled Tomato Slices fresh Fruit Salad with ' Creamy Dressing Bread Butter , Tapioca Pudding Milk SWISS RICE CASSEROLE 1 tablespoon butter IV4 cups milk 1 cups cooked rice V lb. Swiss cheese, grated , Vt teaspoon salt teaspoon dry mustard 2 eggs, beaten Combine butter, milk and cooked rice in a double boiler and heat to scalding. Add cheese; when melt' ed, remove from heat,' add salt and mustard, and fold In beaten eggs. Pour into buttered . casserole and bake in a moderate oven, 125 F., for about 4S minutes, or until firm and 'golden brown. Makes t aervings. Easy Macaroni and Cheese Sauteed Parsnips Endive Salad Whole Wheat Bread Butter Baked Grapefruit ' Milk EASY MACARONI AND CHEESE I ounces elbow macaroni . Hi cups sharp American cheese, cut in H inch cubes teaspoon aalt tii teaspoon pepper 1 cups milk Paprika Butter Cook macaroni in boiling, salted water until tender. Drain and rinse. In a buttered oblong baking pan alternate layers of macaroni and cheese, sprinkling each layer with a little of the salt and pep per. Pour milk over all. Sprinkle top with paprika and dot with butter. Bake in a moderate oven, ISO F., for about 40 minutes or ejntil golden brown on top.
