2 tablespoon! flour
1 (part milk
V pint oysters
1 teaspoon salt
V teaspoon celery salt
Dash pepper
Melt butter in saucepan over
16w heat, blend in flour. Add milk
and atir constantly until sauce
boils and thickens. Add season

from oysters. hop oysters, using
chopping bowl; add with oyster
liquor to not mixture, heat thor
oughly, approximately 18 minutes.

SWISS RICE CASSEROLE
1 tablespoon butter
IV4 cups milk
1 cups cooked rice
V lb. Swiss cheese, grated
, Vt teaspoon salt
teaspoon dry mustard
2 eggs, beaten
Combine butter, milk and cooked
rice in a double boiler and heat to
scalding. Add cheese; when melt'
ed, remove from heat,' add salt
and mustard, and fold In beaten
eggs. Pour into buttered . casserole
and bake in a moderate oven, 125
F., for about 4S minutes, or until
firm and 'golden brown. Makes t
aervings.

EASY MACARONI AND CHEESE
I ounces elbow macaroni .
Hi cups sharp American cheese,
cut in H inch cubes
teaspoon aalt
tii teaspoon pepper
1 cups milk
Paprika
Butter
Cook macaroni in boiling, salted
water until tender. Drain and
rinse. In a buttered oblong baking
pan alternate layers of macaroni
and cheese, sprinkling each layer
with a little of the salt and pep
per. Pour milk over all. Sprinkle
top with paprika and dot with
butter. Bake in a moderate oven,
ISO F., for about 40 minutes or
ejntil golden brown on top. Makes

own. In This instance, evaporated
milk acts as the unifying force to
achieve harmony among the sev
eral piquant flavors.
PIQUANT SALAD DRESSING
A cup -evaporated milk
to teaspoon augar
to teaspoon paprika
to teaspoon dry mustard
to teaspoon celery seed
to teaspoon salt
Vt teaspoon Tabasco
I tablespoons catsup
1 tablespoons lime or lemon
juice
cup cottage cheese, optional
To evaporated milk, add augar,
paprika, mustard, celery seed, salt
and Tabasco. Stir in catsup and
lime juice. For a thicker dressing,
mix with cottage cheese. Serve
with tossed green salads, aspara
gus, green beans or other vegets
ble salads. Yield: cup without
cottage cheese.
