Often, unless the candy, maker has her own favorites, the ma be faced with a dilemma about just -what to make. When Mrino r.ili for ."nuts", tnr using filberts and you will be pleased with the results, lor in benti have a crunchiness that will dd a pleasing texture to candies. To get you started, here are some favorite recipes using this featured northwest nut. FILBERT PATE ROLL I eupa sugar ' '", ' , " Jeup light creamy U teaspoon salt 1 pound chopped dates' I cup chopped Oregon filberts cup shredded coconut ' U trasnonn vanilla Combine the togar, cream and alt. Cook until mixture reaches soft ball stage in cold water, or S3 degrees on a candy thermom eter. Add the chopped dates. Cook fffliu U1B mixture aepric iivin the'psn when stirred. (Takes about 3 minutes). Add the chopped fil berts, -coconut and vanilla. Beat until coot. Pour onto a wet cloth and form into a roll. Cool. Cut Inte slices. Makes CO slices, IVi inchM in diameter. Remove immediately from beat, add butter and vanilla. Coot until lukewarm, then beat until creamy. When it begins to turn color, stir In the nuts and turn into buttered sans. Cool and cut into squares, t FILBEKT DIVINITY I cups sugar - ''.":'' 4 cup light com syrup , , cup water ' v Few grains salt 1 t egg whites . ' 1 teaspoon vanilla V, cup chopped Oregon filberts Combine sugar, corn syrup, water and salt and cook ever low heat. Stir until augar is dissolved and then cook without stirring to 22 decrees F. or until a very firm ball is formed in cold water. Just before syrup reaches 15J degrees F., beat egg whites until stilt, but not- dry. With a damp cloth wipe the crys tal! from the pouring edge of the pin. Four the syrup in a very fine stream over the egg whites. beat In? constantly while pouring. J . Co not scrape the bottom of the paij. Beat until the mixture holds its shape. Add vanilla and iht ch1?ped filberts. Pour into a but tend shallow platter, cool and cut into squares; or drop onto a cookie sheet with a teaspoon te form mounds. Makes about IVi pounds candy. Dip ap- ri.ee a sice of apple on lop oi batter in each muffin cup. Bake in a hot oven (2S degree F for 3(1 to 33 minues or until muffins -d apples are done.
