Sauce Filling Chocolate Flavor A sauce and fillinf um choc elate that favorite of aU flavors. The fillinf usea up extra yolkt from a pudding or cake. Luele's Chocolate rilllnf IVi aquarei unsweetened " ' chocolate . I cup milk ; , 14 cup sugar . I tablespoon! flour ' k teaspoon salt ,2 egf yols, slightly beatea I tablespoons butter , Add chocolate to milk and heat ia double boiler. When chocolate (a melted, beat with rotary ff beat er, untjl blended. Combine sugar, flour and salt add gradually to chocolate mixture and cook until thickened, stirring constantly. Then continue cooking 10 minutes, stir ring occasionally. Pour small amount of mixture oyer the egg yolks, stirring vigorously; return to double boiler and cook 2 min ute longer, stirring constantly. Remove from boiling water; add butter and cool. Makes li cups filling. This filling may be used for cakes, eclairs and cream puffs. Ckaealate Saare 1 squares unsweetened chocolate ' 1 cups milk cup sugar -1H tablespoons flour 1 k teaspoon salt 2 tablespoons' butter 1 teaspoon vanilla Add chocolate to milk and heat in double boiler. No excuse, really tor run ning short of supply, as they are easily made. Good keepers, too, so you can maki double the recipe or mora at one time. A generous measure of moist, deli cious prunes does th trick. DAD'S OATMEAL COOKIES 1 cup prunes cup shortening 1 cup sugar 2 eggs 6 tablespoons milk XVt cups sifted all-purpose flour 3 teaspoons baking powder l teaspoon salt 1V cups quick-cooking rolled oats i cup chopped walnuts Cover prunes with water and boil 20 minUtes. Drain, and cut from pits into small pieces. Cream shortening and sugar, and stir in well-beaten eggs and milk. Sift flour with- baking powder and salt. Combine with oats and stir into creamed mixture. Mix in vanilla, nuta and prunes blending thoroughly. Drop by teaspoontuls onto greased cooky sheets. Bake in hot oven 400 degrees) about 15 minutes. Makes about 2Vt dozen cookies. NICE SHAPE Mold potato salad in custard cups. Turn out on lettuce when you are ready to serve. Cheeseburger Has Roquefort Flavor Roquefort cheese added to ham burgers makes them into some thing extra special. ROQUEFORT CHEESEBURGERS IVt pounds chopped beef S ounces Roquefort cheese 2 teaspoons aalt Shane the meat Into eight pat- tie. Divide the cheese into four pieces; place a piece ia the cen ter of four of the patties. Top each with a plain meat patty, sealing the edges securely. Lightly sprin kle the surface of the skillet with salt; heat. When hot, place the patties in the skillet and brown slowly on both sides. Serve hot on toasted buns. Serves 4. Statesman, Salem, Ore., Fri, Sept 21, 56 (Se&JII)-3 Plum Pudding Is Refrigerator Item Frozen plum pudding turns this mid-winter treat into a summer dessert. FROZEN CHOCOLATE PLUM FUDDING 4 squares unsweetened ' chocolate 2 cups milk 1 cup sugar Vii teaspoon aalt 2 cups heavy cream 4 cup aeedless raisins, halved cup coarsely cut nut meats Add chocolate to milk and place over low flame. Cook until mix ture is smooth and blended, stir ring constantly. Add remaining ingredients, mixing thoroughly. CooL Freeze, using t parts ice to 1 part salt. When stiff, remove dasher; cover tightly and repack in 4 parts ice to 1 part aalt. Drain and repack, if necessary. Makes about IVi quarts pudding.
