Tuna a la King On Summer Menus Tuna, that versatile fish, - goes aicely in a la King, a recipe once reserved for chicken. TUNA A LA KING ,; 2 cans tuna (6V4 or 7 ol each) Y cup chopped green pepper 't cup butter, or other fat, melted ' -Y cup flour i 1 teaspoon salt Dash pepper ' - ' 2 cups milk ' cup chopped pimiento ' Drain tuna. Flake. Cook green pepper in butte until tender. Blend in flour and seasonings. Add mlik gradually, and cook un til thick, stirring constantly. Stir in pimiento and tuna. ,- Serve in patty shells, toast cups or over squares of corn bread. Serves 6. Molasses Gives Flavor to Sauce Where sweet sauces are need ed, this molasses one should go. MOLASSES SAUCE 8 dates Is cup pecans J3 cup coconut Yt cup dark molasses Yt cup corn syrup 2 tablespoons butter Pit and cut dates in strips, lengthwise; shred pecans length wise, and combine with coconut Heat molasses, corn syrup, and butter. Mix with other ingredi ents. Serve warm as a sauce for pudding. Serves 6 to 8. Popovers Hold I Creamy Foods, Once you've become adept at popover making, you will enjoy making them often. Try this on your company some, morning. - FILLED POPOVERS 1 cup flour Y teaspoon salt 2 eggs . 1 cup milk Sift: the flour; measure, and sift again with the salt over un beaten eggs and milk. Beat with a rotary beater until the batter is free from lumps. Fill un-1 creased custard cups one-half I full Bake in a hot oven (450 degrees) for 30 minutes or until browned: reduce to moderate oven (350 degrees) and bake 10 1 to 15 minutes longer. Remove from cups; cut off tops with a sharp knife and fill with the creamed mixture. Replace the tops and serve at once. Makes 8 popovers. ft 1 Chowders TASTE Q GOOD!
