A - ' i Four-in-One Cookies Use Only One Bowl Here'r something new for the ' cookie brigade a refrigerator reci pe that can be made into' several entirely different cookies, 'Snappy Sugar Crisps are easy to make only one bowl's needed. - You melt the margarine in a saucepan and add the other ingredients, one at a time.- It's' that simple. - -Front' there on in, you' use your ingenuity. Here is the recipes, and some 'of the ways to make it into interesting forms. . f SNAPPY SUGAR CRISPS Vi cup, margarine. i . : cup sugar ?1 egg i 1 teaspoon vanilla - i li sups sifted flour - I " Vt teaspoon baking powder teaspoon salt ' , Melt margarine . in a Vk quart (or larger) saucepan. Remove from heat Add sugar,' egg and vanilla and beat until light and fluffy, about one minute. Sift flour with baking powder and salt over mixture and ' blend thoroughly. One cookie dough becomes several when variations are made. This sugar crisp cookie begins as-a refrigerator recipe and takes, on cinnamon , for the fans, chocolate, for the waffle bars, frost ing for the circles and raisins for the diamonds. , , , : ' 1 . -' ' . . -. 1 ' ' t l- Cook Beet Greens Like French Do Beet greens are r f peciai; treat in many families, wh'er e they grow them in home 'gardens or watch' for them -during j their short appearance-in the nnarkets.; Here's a soup using the greens. ' fRESH BEET GREEN ; VICHTSSOISE li cups chopped, young beet - greens r 2 medium onions 2 tablespoons ) butter ' 2 medium potatoes, cooked 4 cups chicken broth or stock 1 cup milk Salt and pepper to taste -V cup diced cooked beets 6 thin lemon slices Simmer , beet greens in a very small amount; of "water, (approxi mately 10-20 minutes) until very tender. Drain, chop onions and . saute in butter until soft, but not brown. Combine greens, cooked peeled potatoes and onions -with one cup broth. Puree, eitfier in a blendor or. by pressing through a fine sieve. Add-remaining broth and -simmer 5 . minutes. Strain and chili until very cold. Add milk. Taste for seasoning. .Add salt and pepper if desired. Serve in chilled soup cups, garnished with diced beets and thin slice of letion. A small sprig of beet green may be added to the' gar nish if desire'd. Serves 6. Con tains approximately 142 calories per serving. Using edge of teaspoon cut five gashes from outside almost to center of balls. Flatten each section ; with well floured spoon. Sprinkle with cin namon and sugar. , CHOCOLATE COOKIES: In the basic recipe melt ft cup semi-sweet chocolate pieces with the mar garine. Blend thoroughly and proceed as with plain dough. When chilled dough has been rolled out on cookie sheet draw a well-floured fork down and across to make waffle pattern. Divide into squares with knife or wheeL . Bake, cool and break apart - REFRIGERATOR COOKIES: Di vide chilled " dough in , two and shape each half into a roil 2 inches in. diameter, 'j Wrap .each roll, in waxed paper. . Chill at least 1 hour. Slice thin and bake. When cool, frost and sprinkle with coco nut or chopped nuts. READY TO USE Here's a good spread to have in the refrigerator for use at snack time. Father especially will enjoy it. Cream a half cup of butter or margarine with a half cup of crumbled blue cheese; ' mix in Worcestershire sauce and celery salt to taste. Use as a, spread for crackers, Melba toast or for stuff ing celery. . " . CRISP EM Freshen drop cookies by reheat ing them in a covered casserole in a slow, oven for 8 to 10 minutes. Crisp cookies may be freshened by putting them on an ungreased cookie sheet or in a shallow pan in a slow oven for 3 to 5 minutes. Meat loaf for . Outdoor Meals ; One of the nicer cold main dish es for -summer dining is jellied meat loaf, a good use " for, left overs. Here is one that is season ed just right I '; HEARTY MEAT - - VEGETABLE LOAF 1 envelope unfavored gelatine M cup cold water 2 bouillon cubes IV4 cups. very hot water - IVi tablespoons lemon juice . 1 teaspoon grated onion 1 cup finely diced Cooked meat Vi cup diced celery. ' cup cooked or canned peas, well drained j Sprinkle'gelatine on the cold water to soften. Heat together bouillon cubes, the very hot wat er, lemon. juice,' andionion until bouillon cubes are completely dis solved. Add softened gelatine and stir until thoroufNy dissolved. Chill to unbeateaVcgg white con sistency. Blend together with meat celery, and peas. Turn into a 4-cup loaf pan. Chill until firm. Cut into slices and serve on crisp lettuce. Yield: 6 servings. ' - 1 . UNIFORM y i - When you use canned apple sllr ces you'll find all' the slices art' the same size because after the fruit is peeled and cored, it is; mechanically sliced. Heat the can, ned slices with a little butter or' margarine on top of the range . and serve with sausage, roast pork or nam. The slices are also fine, of course, to use in pudding i or pie. DOWNTOWN If you want to serve an extra " special ice-cream dessert have ; three different flavors of ice cream on hancL At serving time I put a 'portion of chocolate sauce on each individual plate; add " three scoops' of ice cfeam, one of each, flavor.
