Here the powdered pectin is being added according to the recipe. By GRETCHEN Perhaps your cupboard is pret ty well cleaned of jams and jel-1 lies; but there are plenty of fro zen berries on hand for making it- Here then is a recipe from Cheese Pie Goes Company Menu Here's one of those elegant ' dishes you would like for com-1 pany, and fortunately, you can i make it the day before and store ! in the refrigerator, it's even bet ter, i LULU CHEESE PIE 10 graham crackers, rolled fine 1 tablespoon sugar V cup melted butter Combine all ingredients; mix welL Sprinkle mixture evenly over bottom of 9-inch glass pie plate. Reserve balance to use on top of pie. 2 (3-ounce) packages cream cheese 1 cup thick sour cream 1 (15-ounce) can sweetened condensed milk 1 tablespoon unflavored gel atine 4 cup cold water 'a cup lemon juice Vi teaspoon orange flavoring Few grains salt Soften cheese; stir in sour cream and condensed milk, mak ing smooth mixture. Soften gela tine in the cold water; dissolve over hot water. Add to cheese mixture, along with remaining ingredients; blend well. Pour, into prepared pie plate; sprinkle reserved crumbs over filling. No 4 the manufacturers of pectin that will make good use of your stock of frozen berries, and produce excellent jam. UNCOOKED JAM This recipe uses 3 16-oz. pack ages or 4 12-oZr packages or S 10-oz. packages. 1. Partially thaw berries and put in 2 or 4 quart kettle. Using potato masher, crush berries thor oughly to obtain enough liquid to dissolve the pectin. Place over slow fire and warm to 100 Cor temperature you'd use for baby's milk). No hotter, please! Remove from fire. 2. Sift 1 package (3-oz.) M. C. P. Jam and Jelly Pectin into thawed berries, stirring vig orously. Set aside for not less than 30 minutes, stirring occas ionally to assure that pectin is fully dissolved. 3. Stir in 1 cup light corn syrup pnd mix well. 4. Now, stir in 8 level cups su gar (previously and accurately measured). Mix well. 5. With Red Raspberries the jam is ready to eat when sugar is dissolved. With Strawberries, add V4 cup lemon juice after sugar is dissolved; mix well. Makes 5 full pints or 13 (H-lb.) glasses. If jam is, to be kept for a time, put in pint jars or paper cartons, well covered (no paraffin need ed), and chill for 24 hours in deep freeze, or freezing or ice cube compartment of refrigera tor. Then, store as you would milk, and use as desired. Never store these jams on pantry shelf. They will not keep without refrig eration. Instant coffee has other uses than as a mere drink, is adds a delightfully fragrant flavor in concentrated form to foods where a lot of flavor is desired. Take, for instance this coffee frosting as a good example of what you can do. The manufacturer sent a whole booklet of recipes: RICH COFFEE FROSTING V2 cup butter V teaspoon salt 3Vi cups sifted confectioners sugar 1 egg or 2 egg yolks, unbeaten 1 teaspoon instant coffee Vi teaspoon vanilla 2 tablespoons tep milk (about) Cream butter; add salt and part of the sugar gradually, blending after each addition. Then add egg, instant coffee, and vanilla mix well. Add remaining sugar, alternately with milk, until mix ture is of right consistency to spread, beating after each ad dition until smooth. Makes about 2 cups frosting, or enough to cover tops and sides of two 9-inch layers, or tops of 3 dozen cup cakes or 4 dozen 3i-nch cookies. NO FREEZE There's no use putting nylon hose in a home freezer to make them last longer.
