It takes flaked canned salmon, com-and eggs. - ; Corn, Salmon, Souff leed Make Beginning for Spring Menu Years ago young cooks used to learn how to make special dishes, but rarely selected these with the idea of a complete menu-in mind. Now beginning cooks want, when they consider a new recipe, to think first of how it will fit into a properly planned meal as a whole. Usually we begin our meal planning with the main dish, such as the one given below. With the addition ol French-fried or other men nnfatnes. a ereen saiaa ana a iruit dessert, tnis recipe, con taining fish and cheese proteins plus a yellow vegetable, proviaes everything needed for a satisfy ing, well-balanced luncheon or dinner. SOUFFLEED CORN AND SALMON 1 flat can (7-oz.) salmon 1 No. 2 can whole kernel corn M cup mayonnaise : 4 eggs V4 teaspoon salt Dash pepper rops Tabasco sauce cup grated-theese (optional) Bread crumbs Bone salmon and tlaker-Drain 1 corn thoroughly and mix salmo in a large mixing bowl. Toss with mayonnaise. Beat eggs until light and fluffy and add seasonings. Fold into salmon-corn mixture and pour into a greased 1-quart or 4 individual casseroles. Top with cheese and crumbs or erumbs only. Bake in a hot oven- (400 F.) 20 to 25 minutes. Yield 4 servings. H QUICK TRICK i : Add canned tuna fish to a plain tomato sauce and : serve over spaghetti for something different. ' i - Cauliflower Takes Creamy Egg Sauce Cauliflower is an excellent vegetable during these months that . are rather short of fresh vegetables. In fact, the entire cabbage family comes into prom inance in winter and early spring. Here is one of the many recipes Sice for cauliflower: CAULIFLOWER EGG SAUCE 1 large cauliflower 2 tablespoons butter or ' or margarine Vt teaspoon salt Pepper teaspoon Worcestershire sauce 1 cup milk . 2 hard-cooked eggs, coarsely chopped 1 cup corn flakes, crushed - 2 tablespoons melted butter or margarine "Wash cauliflower well. Remove green stalks. Leave the head whole. Cook, covered, in 1 inch boiling, salted water 20 to 30 nun utes, just until tender. Place in serving dish. Melt butter or margarine. Stir in flour, salt, pepper and Wor cestershire sauce. Gradually add milk. Cook until thickened, stir ring constantly. Add eggs. Brown crushed corn flakes in butter or margarine. Pour egg sauce over the cooked cauliflower and sprinkle with buttered corn flake crumbs. Makes 6 servings. Oregon Style fritters! Perfect tenten meal ! Fry. hast ing now and then with the hot fat, until browned on both sides (about 2 minutes cooking on each side). Drain and serve with or without a sauce. Allow 2 fritters for each serving. Makes 6 servings or 12 fritters.' Add milk gradually and . cook . until thickened, stirring frequently. Add Worcestershire sauce, cheese and flaked tuna fish.
