BANANA LOAVES r 1 cups sifter flour I , 2 teaspoons baking powder ht teaspoon salt 5 : . cup shortening ! cup sugar r 1 j 2 eggs, well beaten -1 cup mashed ripe bananas (2 to 3 bananas) ; cup walnuts or pecans, broken Ya cup (2 ozs.) finely cut, - candied pineapple Vm cup (2 ozs.) finely cut, candied cherries 1 V cup (2 ozs.) thinly sliced citron A- Ya cup (2 ozs.) finely cut, candied orange peel V cup raisins Sift flour, baking powder and salt together. Beat shortening un til creamy in mixing bowL Add sugar gradually to shortening and continue beating until light and fluffy. Add eggs and beat well. Mix in nuts, pineapple,- cherries, citron, orange peel and raisins. Add flour mixture alternately with bananas, a small amount at a time, mixing after each addi tion only enough to moisten dry ingredients. Turn l Into 2 well- greased small loaf pans 11Vx3Yx 2 inches) and beke in a moderate oven (350 deg.) about 50 to 60 imnutes or until breads are none. CooL Frost and decorate as de- DUSTOFF -; Don't throw away old" socks. They make excellent dust mitts; Woolen socks especially are excel lent polishing cloths for wax. - Cheese Makes an' Italian Meat -U - - ii - You'll like your next veal cut lets cooked this way, vaguely, re minding you of sunny Italy. ' VEAL CUTLETS ITALIAN STYLE " ; 1 small onion, chopped 2 cloves garlic,' chopped 2 tablespoon olive oil ( . 2 cans tomato sauce f , Vt teaspoon sweet basil Y teaspoon salt ' ! i -1 large egg ; 3 tablespoons water I I pound veal cutlet, 1 pounded : thin , Cheese crackers, rolled fine . Mozzarella cheese ! ! Saute onion and garlic in oil until golden. Add tomato sauce, basil and salt . Simmer: 30 min utes. Combine egg and water. Coat veal cutlet with cheese cracker crumbs, dip in egg-water mixture, coat again with crumbs. Fry in hot fat until golden brown. Pour sauce in baking; dishes. Top with cutlets and : slices of cheese. Bake in moderate oven (350 F.) 10 minutes or until cheese melts. Serves 5 to 6. sired. Makes 2 loaves, it If desired, one larger loaf may be made by turning batter into a well-greased ' loaf pan (SViX 4Hx2H inches). Bake at 350 de grees about 1 hour 10 minutes.
