Clever Muffin Recipes Put Zest in Meal Muffins, especially those made from coarse flours or accented with nuts, berries or raisins make excellent hotbreads and are handy to make breakfasts more interest ing. Muffins will add much to a dinner otherwise slightly under par in quantity and are simply made to be served for Sunday night suppers. " Bran is one of the favorite-Ingredients for muffins. Here's one recipe a little different: , ; BXAN CINNAMON MUFFINS Ya cup shortening cup sugar. 1 egg. separated IV4 cupc sifted flour 2Ya teaspoons, baking powder ' V teaspoon salt teaspoon nutmeg ' cup milk , Y cup all-bran : ' Yt cup melted butter or marga rine cup sugar 1 teaspoon cinnamon ' Blend shortening and sugar; add egg yelk and beat well. Stir in sifted Ingredients alternately with milk and bran. Fold in stiffly beaten egg 'white. Fill greased muffin pans Ys fulL Bake in mod erate oven (350) about 25 min utes. Remove from pans at once and roll quickly in melted butter and then in mixture of sugar end cinnamon. Yield: 10 muffins 2 ft inches In diameter. Another . breakfast cereal goes into this muffin for interesting flavor and texture: CORN-SOYA MUFFINS 3 tablespoons shortening Ya cup sugar , , 1 egg j 1 cup corn-soya shreds J cup milk 1 cup sifted flour 2 teaspoons baking powder teaspoon salt Blend shortening and .sugar thoroughly; add egg and beat welL Stir in corn-soya shreds and mux Add dry ingredients which have been sifted together; stir only un til flour disappears. Ful greased muffin pans three-fourths full and bake in moderately hot oven (400) about 22 minutes. CRANBERRY UPSIDE-DOWN MUFFINS (Makes about 24 muffins) 2 cups fresh cranberries - . 1 cup sugar 1 teaspoon nutmeg 2 cups flour 4 teaspoons baking powder Ya teaspoon salt VH cup sugar cup butter or margarine 1 egg, well beaten 1 cup milk , v , ; "Rinse cranberries. Place In waterless cooker. Combine 1 cup sugar and . 1 teaspoon nutmeg. Distribute evenly on top of cran berries. Cover. Cook over high beat until lid is hot to touch (about 3-5 minutes). Reduce to low heat and continue to cook 3 minutes. Remove from heat and shake. Remove lid. Set aside to cool. In the meantime, combine and sift dry ingredients. Cut in butter or margarine. Stir in egg and milk until thoroughly mixed. Do not over mix. Place a heaping teaspoonful of cranberries in the bottom of a well-greased muffin tin: Top with muffin batter. Wash pears and cut Into eichts. Pour the pineapple juice over the pears; dram. Arrange the pears on half of a large plate or wooden cheese server. Fm the remaining half of the plate with - crackers. Mash the cheese with a fork. Add the lemon Juice and the- pineapple juice drained from the pears. Beat until fluffy. If the cheese is not of the proper spreading consistency, two tablespoons of water may be added. Heap cheese into small dish at center of fruit-cracker tray. Provide cheese spreaders. Combine a package of cream cheese with a can of drained minced clams and half a can of chopped ripe olives with Worcestershire sauce to sea son.
