Parrish Junior High Cooking Classes Equip Girls With Best in Domestic Art Menus planned and JServed While Science of Canning Is Also Studied; Department Moro Than Self-supporting The girls at the J. L. Parrish Junior high school are learning to be cooks par experience, if one may judge from the nteals that are served each noon at the schools cafeteria. Under the supervision of Mrs. Eula S. Creech, the girls of the 9th grade plan the menus, cook the meals, order the food stuffs;-take in the cash, do the banking, draw the checks and in general handle the entire manag ing of the kitchen. During the lunch hour ltseir,' eight girls from outside the 9th grade class are called in and they with the 15 girls of the class do the serving. Afterwards they clean the dishes and the kitchen in general. For cooking the plan ning of the meals the girls of the class receive credit toward gradua tion, and for the serving and sub sequent service the girls receive their meals each noon. Each meal is built upon a definite plan so that the dishes will balance with each other.- The aim of the cooking department is not only to teach the girls how to cook, but to teach them how to cook meals that will make for the best health of families. The re ceipes the girls use for the lunches are regular family size recipes, be ing multiplied. merely enou times to supply the amount, need ed. Each day between 75 and 85 students and teachers are fed by the denartment. Practically all the teachers have taken to eating at the cafeteria, and many of the students eat there, although the majority of them, living within walkiner radius of the school eat their lunches at home. Some pa trons pay cash, but if they wish thev are allowed to charge their meals, and the bill is sent to their parents at the end of each month It is not the purpose of the de nartment to make money on the meals, but merely to break even on the cost of the food stuffs with a little left over for the purchas ing of equipment. For instance soup is only 5c, sandwiches 2c cocoa, tea or milk 4c. hot dish 5c, while salad and desert are 7 each. In spite of these low prices the department more than breaks eiven, and at the close of the last school year had a profit of $43.41. This money has been placed into a sinking fund for the purpose of purchasing new equipment and it Is the hope of the department to clear enough each year to keep the equipment up to modern.
