Shopping habits show change The d ifference between food shopping habits today and those o f yesterday lies more in kind o f food purchased than in the amount pur chased. The average American buys about 1400 pounds o f food each year, about the same amount the av erage A m erican bought 20 years ago. ‘ But people have changed in what they b u y ,” says Tod H a m il- ton, Multnom ah County Extension agent. “ For example. 20 years ago average consumption o f cheese was eight pounds per person per year. Now the cheese consumption level is up to alm ost 18 pounds per year. Pork and chicken consumption are also up. Fresh potatoes, coffee, and whole m ilk consum ption on the other hand, have decreased. W h a t’s the first thing you think o f for your Independence Day cele bration? Barbecued chicken, right? Right! And corn-on-the-cob, right? Right! W ell, this will offer the easi est, tastiest way to get it together, starting with your chicken. M ix up a sauce, starting with Open Pit barbe cue sauce, and prepare your chicken fo r baking (no hassle when the crowd gathers), b roiling or for on the g rill. Add the corn, other fix ings, (potato salad, watermelon, tall d rin ks), and the celeb ratio n ’ s on. Enjoy! Z E S T Y B A R B E C U E D C H IC K E N 1 cup Open Pit barbecue sauce, any flavor 2 tablespoons brown sugar 2 tablespoons lemon juice 1 tablespoon Worcestershire sauce 2 small garlic cloves crushed (optional) 2 '/i pounds frying chicken piece* 2 tablespoons melted butter or margarine Combine barbecue sauce, sugar, lemon juice, Worcestershire sauce and garlic in bowl or measuring cup. riacc cnicxen, J Kin side up in shal low baking pan and brush with butter. Bake at 3 7 5 * fo r about 45 minutes or until tender, basting fre quently w ith sauce. F o r browner glaze, place in prehaeted broiler for about 5 minutes. In a large saucepan, place corn ears. cover with cold, salted water. Add a little m ilk to sweeten the corn. When the water boils, the corn is done. 1/8 teaspoon paprika C ook potatoes in boiling salted water u n til tender. D ra in ; peel. While still hot, cut into slices. Put in H O T OR C O L D P O T A TO S A L A D bowl; keep warm. Meanshile, cook bacon in skillet for 4 minutes. Add 6 medium potatoes, scrubbed onion, celery and pickle, saute until 4 slices bacon, diced golden. Stir in rem aining ingredi '/« cup chopped onion ents, bring to boil. Pour over pota '/« cup chopped celery toes; toss lightly. I dill pickle, chopped Serve immediately for hot salad, '/«cup water or let the salad blend overnight in '/j teaspoon dry mustard refrigerator (or several hours) and */t teaspoon sugar serve it cold. But lifestyle changes such as the num ber o f w orking women and tw o income households, as well as the availabil ity o f different food products, have also had an effect. Although food prices have con tinued to rise, Bakke notes that food costs have not put a burden on household budgets. In I960, about 20 cents o f each dollar o f disposable income were spent fo r fo o d . In 1980, the dollar share for food ex penditures was slightly more than 16 cents. w Ç ÿ flip J h a u niin. When using a microwave oven to prepare p o rk, be sure the internal temperature reaches 170 degrees F. Pork must reach this temperature to destroy any m icro-organism s that might be present. M icrow ave ovens cook by excit ing the water molecules in the food, explains Tod Ham ilton, Multnomah County Extension agent. The varia tions in the distribution o f water in the pork, the uneven energy distri bution in microwave ovens and (he potential energy blockage by bone may result in uneven cooking. I f the entire piece o f meat doesn’t reach a temperature o f at least 170 degrees F ., p o ten tially dangerous trichinae m icroorganism s in the meat may not be killed, Ms. H am il ton says. These include ro ta tin g the meat during cooking, and letting the p ork sit fo r several m inutes a fter cooking to assure a more uniform temperature distribution. "Th e cook can increase the effec tiveness o f the ‘equalization* time by w rapping the pork in fo il a fte r c o o k in g ,” Bakke adds. A fte r the pork sets for a few minutes, check various places in the roast w ith a meat therm om eter. I f any part o f the chop or roast has not reached at least 170 degrees F ., cook the meat more thoroughly.
