B A R B E C U E D C O U N T R Y R IB S Country-Style ribs, cheese spoonbreed end collard greens make a colorful spring dinner. 6 lbs country style spareribs. cut into serving-size pieces 1 medium onion, chopped 1 tablespoon butter or margarine 1 can (about 16 oz.) whole purple plums 1 can (10)4 oz.) condensed tomato soup H cup packed brown sugar cup red wine vinegar 1 tablespoon celery seed 1 tablespoon chili powder 1 tablespoon Worcestershire 1 teaspoon salt In large pan, cover spareribs with water. Simmer 1 hour; drain. Mean while, to make sauce, in saucepan, cook onion in butter till tender. D rain plums, reserving syrup. Re move seeds from plums. In electric blender, combine plum * and onion mixture; blend until smooth. Return mixture to saucepan. Stir in reserved syrup and rem aining ingredients; simmer IS minutes. Stir occasional ly. Arrange spareribs on broiler pan; brush w ith sauce. B ro il 4 inches from heat 20 minutes or until done, turning and brushing with sauce. Serve with remaining sauce. Makes 6 to 8 servings. Potato scab fungus lowers crop quality Potatoes can be p lanted in the garden any tim e in A p ril or M a y , but the potato harvest next fall may be o f low quality if you don’t take steps now to prevent potato scab. Potato scab is a fungus disease of potatoes that may be present in the soil or on diseased tubers, says Ray M cNcilan, Oregon State University Extension home gardening agent. Potato scab is characterized by corky lesions appearing on the sur face o f the potato. The lesions may be small and superficial or consist of deep pits. Neutral or alkaline soil fa vor development o f scab. D O U B L E B U R G ER S W IT H BARBECUE SAUCE 2 pounds ground beef 1 teaspoon salt Generous dash pepper Com bine beef and seasonings. Shape into 16 thin patties. On half o f the patties, place a cucumber and onion slice. Top with remaining pat ties and seal edges. M eanw hile, in saucepan, cook celery with garlic in butter until tender. Add remaining ingredients. Cook over low heat 13 minutes; stir occasionally. Broil pat ties 4 inches fro m heat fo r 13 minutes or until desired doneness, turning and basting with sauce every 3 minutes. Serve w ith rem aining sauce. Makes 8 servings. CRISP ÇRU51 Whole Fryers There are chem ical treatm ents that can be used on potato seed to mak them scab resistant, but simply planting resistant varieties in the garden is an easier way to avoid the problem.
