Page 2 Section il Portland Observer, March 18, 1982 HOW TO MEASURE WINDOWS Contest nears deadline There’ s s till time to enter the 34th National Chicken Cooking Contest, which w ill take place in Dallas, Texas, at the Loews Anatole Dallas Hotel on August 17, 18, 19. Anyone can enter, but hurry—dead line is April 1st. The grand prize is $10,000 and second, third, fourth and fifth place winners w ill share an added $10,000. I t ’ s easy to enter, just send in your favorite chicken recipe. Send in as many recipes as you wish, but each recipe must be on a separate sheet o f paper, and each must have your name, address and telephone number on the front o f it. Union 287-9430 REClPf Tin F Award Winning Chicken Kabisha Chicken Kabisha wins honors Mrs Irene Canady o f Baltimore will soon be treating her son, daugh ter-in-law and I0-year-old grand son to a very special vacation, thanks to her winning recipe in a lo cal Chicken and Rice contest, spon sored by radio station W SID and Uncle Ben’ s Converted Brand Rice. The Cook-Off was held in the Mon- dawin M all, a shopping center in Baltimore’ s Black community, on February 27th. Six top finalists competed for the prize o f an all-expenses paid trip for four to Walt Disney W orld in O r lando, Fla. When the chopping, browning, frying and baking was done— Mrs. Canady’ s recipe for Chicken Kabisha was awarded top honors by three well-known B alti more chefs. This economical recipe is not just a basic chicken and rice dish— this one has lots of pizzazz. The sim ple, everyday combination o f chick en and rice is elevated to gourmet stattus w ith its special cooking method. The chicken is marinated overnight in a tangy sauce, baked the next day and served over firm , separate grain rice, which catches the special sauce. The resulting fla vor treat serves 4 generously. Mrs. Canady is a delightful lady, recently widowed and retired after 37 years o f working for Social Se curity and the Army. This is the first recipe she has ever created for a con test and the winner says she named it Chicken Kabisha because it “ sounded A fric a n .” Here’ s Mrs. Canady’ s recipe. SAVE GAS SAVE TIME SAVE MONEY ONE STOP SHOPPINGlCENTERS Prices good Wed., March 17 thru Tue., Mar. 23, 1982 Armour Star “ Pan Size” ^ / armour BACON Sliced Bacon Place chicken in a large bowl. Top with onion, green pepper and garlic. Add water, vinegar and salt to bowl; cover and refrigerate over night. Next day, remove chicken from marinade; drain well, reserv ing marinade. Coat chicken with pancake mix. Heat oil in large skil let. Brown chicken in hot oil, about 5 minutes bn each side. Remove chicken; drain. Place chicken in I3 x 9 -in c h baking pan. Pour re served marinade over chicken Add tom ato sauce. Bake uncovered at 35O°F. fo r two hours. About 'A hour before chicken is done, pre pare rice according to package d i rections. Spread hot cooked rice on a large serving platter Place chicken over rice; pour sauce from pan over chicken. Serves 4 generously.
