This helps in decreasing the body heat loss and packs a wal lop as far as nutrition is concerned. While you're cooking oatmeal, cook an extra two cups and make the ac companying recipe for Oatmeal Nut Bread. These delicious loaves are easy to make and make fine toast as well as sandwiches for the lunchbox. Not all recipes for oatmeal bread call for cooked oatmeal. Some use (he flakes as they come from the package. Recipes using dry oatmeal w ill call for considerably more liquid. N ote, too, that the cooked oatm eal must be cooled to lu ke warm before adding to the other in gredients. I f it's too hot it may de stroy the yeast. This is a delicious bread that toasts to a deep golden brown. It slices well and makes a delicious sandwich for the lunchbox. The re cipe makes three loaves which won’t last long if your bread eaters appre ciate delicious homemade bread. However if there’s a chance it might become stale, slice up a lo a f into small packages for the freezer. W hen properly wrapped it holds m oisture and flavo r for at least three months. His shameless sycophancy led to his name be coming a word meaning blind attachment to a group OA T M E A L N U T B R E A D Thia sim pla. n u tritio u s recipe yields three fra g ra n t loaves o f O a t m eal N u t Bread k'4 to 9 '4 cups unsifted flour 2 teaspoons salt 2 packages yeast 1 cup water '4 cup molasses '4 c u p (, stick) margarine 2 eggs (at room temperature) 2 cups cooked old-fashioned oatmeal I cup chopped pecans In a large bowl thoroughly mix 2 cups flour, salt, and undissolved ac tive dry yeast. Com bine water, m ilk, molasses and margarine in a saucepan. Heat over low heat until liquids are very warm (I2 O ’ F .*I3 O *F .). Margarine does not need to m elt. G ra d u ally add to dry ingredients and beat 2 minutes at medium speed o f electric mixer, scraping bowl occasionally. Add eggs, cooked oatm eal and I cup flour. Real at high speed 2 min utes, scraping bowl occasionally. Stir in enough additional flo u r to make a stiff dough. Turn out onto lightly floured board, knead until smooth and elastic, about 8 to 10 minutes. Place in greased bowl, turning to grease top. Cover, let rise in warm place, free from draft, until doubled in bulk, about I hour. Punch dough down; knead in pe cans. D ivid e into 3 equal pieces. R oll each piece in to a 12 x 8 inch rectangle. Beginning at an 8-inch end, ro ll dough as for je lly ro ll. Pinch seam to seal. W ith seam side down, press down ends with heel o f hand. Fold underneath. Place, seam side dow n, in 3 greased 8 ‘4 x 4 4 inch lo a f pans. C over; let rise in warm place, free from d ra ft, until doubled in bulk, about 1 hour.
