H ow about a barbecue menu with an Indonesian flavor? Juicy cubes o f boneless pork mar inate in barbecue sauce, enriched with tomato puree and the far east ern touch o f peanut b u tte r. The meat is skewered and grilled over charcoal till glazed and crusty and served on a bed o f rice with more o f the delicious sauce for dipping. As an accom panim ent Zesty Y e llo w Squash is a savory blend o f summer squash, onions and peppers sea* soned with a spicy splash o f barbe cue sauce. To complete the menu, serve ripe melon wedges filled with ice cream and a favorite fresh fru it or berry. Sit back and savor the rest o f the summer. Enjoy! 3 tablespoons peanut butter 2 packages (10 oz. each) 3 minute cook frozen yellow summer squash Place pork cubes in saucepan; add salted water. Bring to a b o il. Reduce heat; cover and simmer 13 minutes. M ean w h ile, saute celery and onion in butter until tender but not brown. Stir in barbecue sauce and puree. C over and sim m er 13 minutes longer. Remove from heat and blend in peanut butter. D rain pork cubes and place in sauce. M ari nate 1 hour, then drain meat, reserv ing m arin ad e. M easure 1 cup m arinade and keep w arm . Place pork cubes on 8 skewers. Place ke babs on grill 4 or 3 inches from hot glowing coals and grill 20 minutes, turning freq u ently and brushing w ith rem aining m arinade a fter 10 minutes. Weight loss occurs when an individual eats less calories than he or she uses, Bakke says. S p iru lin a is one o f about 1300 known species o f blue-green algae, Bakke explains. It grows in brackish ponds and lakes in mild and hot cli mates throughout the world and has been a chief source o f food for peo ple living along the shores o f Lake C had, in Central West A fric a , for hundreds o f years. It is also used in Japan as an animal feed to improve the color o f egg yolks and goldfish. “ Spirulina can be marketed as a food in the United States as long as it is labeled accurately and contains no contaminated or adulterated sub stances,” says Bakke. “ But remem ber, it is not a 'm iracle* but just another food that can be used to meet the body’s needs for some nu trients.” not b row n.
