The emphasis is on comedy this summer as Portland State University anticipates its sixth season of produc tions at the Coaster Theater in Cannon Beach. The season, which opens July 4th and runs through August 2Sth, includes three comedies and a melodrama. The schedule looks like this: "Desk Set", by William Marchant, July 4 7 and 11 14; "A Thurber Carnival", by James Thurbeix July 18-21 and 25 28 “Dial M for M urder." by Frederick Knott, Aug, 1-4 and 8 11; and "Harvey", by Mary Chase, Aug. 15-18 and 22 25. Cur tain time for all performances is 8:30 p.m. There are 14 members in the company this summer. Two of them Helen Machin Smith, a speech and drama teacher, and Karen Tate, a junior high school teacher w ho played a lead role in "Pygmalion" at the beach last summer also are directing productions this sum mer. Easy on the budget, too, satisfying and highly nutri tious. No matter which vari ety of dried bean is used as the basis for the soup, the bean can be counted on to be a good source of protein, “ B” vitamins and iron as well as food energy. The savory well seasoned soup given today is made with canned dried beans to cut the cooking time to modern requirements. It uses pinto or kidney beans with tomatoes, onion, gar lic, spices, herbs and a little pork. Dark corn syrup brings out the flavor of many bean dishes. In this soup, it adds just the right amount o f sweetness to help blend the flavors. Hearty Bean Soup 2 cans (16 ounces each) pinto or kidney beans 1 quart water 1 can (16 ounces) peeled tomatoes 1 cup chopped onion 1/2 cup Karo dark corn syrup 1 tablespoon salt 1 clove garlic, minced 1 to 1 1 /2 teaspoons chili powder 1 teaspoon dry oregano Dash pepper 1 cup sliced link sausage, partially cooked .Mix together beans and bean liquid, water, tomatoes, on ion, com syrup, salt, garlic, chili powder, oregano and pepper in heavy 4-quart saucepan or soup kettle. Bring to boil. Reduce heat; cover and simmer about 1 1 /2 hours. Stir occasional ly to mash beans. Add sau sage after soup has cooked about 1 hour. Uncover and boil gently, stirring occa sionally, about 30 minutes or until soup is thicken ed. Makes about 8 (1 cup) servings. Note: Bits o f leftover ham or pork iftay be used to replace sausage.
