Processors inject them with a limited amount (now 3 per cent) of basting solution which is later released throughout the meat as the bird is roasting. It improves the poultry's texture and flavor. The solutions range from straight butter to mixtures of oil and water in various por tions. Oils used are those normally found in margarine, such as cottonseed, soy, co conut, o r corn oil. Basting solutions may also contain turkey broth, plus ad ded flavoring and preserving ingredients and anti-oxtdant agents. USDA, approves the selves." Read the labels carefully so you'll know what you’ re buying. USDA protects consumers, in this way, from having to pay fo r unnecessary liquid additives. Why t«y basted turkeys? Maybe more consumers want them. According to USDA figures last year (1971) one third of the nation's turkey crop was processed and m ar keted as self-basters. But, while they can be more tender and flavorful-and more con venient- tliese birds may also cost more. The three per cent of bast ing m aterial also means that the unbasted bird is that much lighter than il you wanted to ,buy one without this con venience label.
