The operator can remove the entire digestive tract without smear ing the meat in any way, and can pack the flesh and bones from the average mature fowl into a quart jar. With a sharp-pointed knife next cut around the shoulder blade, pulling it out of position and breaking it. Locate the white spots on the ribs and cut along them through the ribs. Then separate the breast from the backhone by cutting through to the white spots and breaking. It is essential to cut in sharply at the point of the breast bone and meat.
