Savada San took over ownership of Lane County’s first and, as far as I know, only Cambodian eatery in September 2016. Since then, he’s added new dishes to the menu every month and rotated other dishes in as specials. “I haven’t made big changes but I’m trying to add more variety and more traditional foods,” he says. Like kor ko, which he recently added as a lunch special. “It’s really traditional,” San says. “It’s probably the number-one dish that represents our country.” Kor ko is similar to a curry, but its main ingredient is a paste of lemongrass ground with galangal (a rhizome with a taste like peppery ginger), garlic, lime leaf and roasted rice, also ground into the paste. The roasted rice lends a toasty quality to this sauce missing from other curries. “Lemongrass is my favorite ingredient to use because of the citrus flavor and the smell,” San says. “It’s really citrusy.” Use a stone mortar and pestle or a food processor to finely grind its tough stalk and mix it with other spices. It’s used to flavor marinades, soups and sauces. “You can also use it raw and put it in a stir fry,” San says. If you plan on eating the lemongrass, process it to be as fine as you can make it. Sometimes, in Thai soups such as Tom Kha, you will see chunks of lemongrass floating in the broth. In that case, it is not meant to be eaten. “If people want to taste lemongrass they should try the kor ko,” San says. “Or a curry.
