That’s what Maurizio Paparo does in his kitchens at Excelsior Inn and Restaurant near the UO campus and Ciao Pizza near Gateway Mall. Ciao Pizza is more like an Italian trattoria with pasta dishes and classic entrees than just a pizza kitchen. “Osso buco is one of my favorite dishes to cook and eat,” Paparo says. “That’s slow-braised veal shank and we serve it on saffron risotto using Arborio rice from Italy flavored with saffron. It’s a rich dish and you can drink a little red wine with it. We can pair a dish like this with an Oregon wine, but it’s an Italian style of cooking.” On both menus, mushrooms and lots of braised meats take center stage. “We love our Oregon truffles,” he says. “It’s a treat to shave a few truffles on a pasta dish or fish or in the risotto. In cold weather, richer food feels better.” Much of the restaurants’ produce comes from a 5-acre farm with three large heated greenhouses in Pleasant Hill.
