A selection of dishes featuring organic ingredients are Mac ‘n’ Cheeze <> FROM GARBANZO GRILL Garbanzo Grill Chef Jon Terry is technique- driven. There’s a good, a better and a best way to do everything, even down to how to open the silken tofu (smack the ascetic block on the table on both sides, so the tofu bits don’t stick to the corners of the package). “There are many choices for vegetarian food in Eugene,” Terry says, “so I knew that my vegetarian food had to be really, really good.” Garbanzo Grill, a food cart located in the Whiteaker at 267 Van Buren, has received excellent reviews, but they’ve been hampered in recent months with irregular hours that cost them some customers. Now Garbanzo Grill is back! Regular hours in September will be 11:30 am to 2:30 pm daily except for Tuesday and Thursday. Terry cooks his pasta in a pressure cooker when making this dish at home; it results in a chewier texture, but is not necessary. — Vanessa Salvia 4 PM - 2:30 AM DAILY Happy Hour 4-9pm THE SAUCE: 1 12-ounce package soft silken tofu (You can use the fi rm or extra fi rm, but be aware that those use isolated soy protein added in as a thickener. To get the same rich consistency as the extra-fi rm silken tofu, simply open the tofu a few hours early or overnight before preparing then pour off the water that will naturally drain out of the tofu. If you forget this step, don’t worry, nobody will notice, but when you want it extra rich and creamy, take the time to do this and it makes a very nice difference.) 3 tbsp nutritional yeast fl akes 1 tbsp soy sauce 1 tsp rice vinegar 1/4 tsp Dijon mustard 2 dashes Tabasco sauce 1/2 tsp salt 1/2 tsp Sucanat, evaporated cane juice or sugar Puréed tofu base is versatile and can be used to add rich and creamy, low fat, high protein fl avors and textures to a wide variety of foods, savory to sweet. Add Handcrafted Microbrews Exquisite NW Cuisine jamesons-bar.com Pressure cooker campanelle pasta: for 1 large serving 1 cup broth 1 cup campanelle pasta (ready in 10 to 12 minutes according to package) Bring broth to boil before adding pasta, add pasta and cover immediately. You should have just enough liquid to cover the pasta. Bring to pressure over high heat then, when 15 pounds of pressure is achieved and shuttlecock starts hissing, lower temperature to medium and cook for 4 minutes. Run cold water over pressure cooker top to quickly depressurize. When pot is safe, open and stir pasta, adding mac ‘n’ cheese sauce until desired consistency is reached.
